SEA AND SHELL SALAD

Categories     Fish     Brunch     Marinate     Vegetarian

Yield serves 4

Number Of Ingredients 11

1 cup medium shell pasta
1 - 16 oz can kidney beans - drained and rinsed
½ cup chopped celery
½ small red onion, thinly sliced
2 Tbsp. chopped parsley
½ cup light Italian dressing
½ head romaine lettuce
1 can tuna, drained
4 medium carrots, peeled, sliced
2 tomatoes cut into wedges
1 bell pepper cut into strips

Steps:

  • Cook pasta, drain. Toss with beans, celery, onion, parsley and 1/3 cup dressing. Let marinate for awhile. Arrange lettuce on plates. Add above mix. Surround with remaining ingredients. Drizzle with remaining dressing.

Tips:

  • Use a variety of seafood. This will give your salad a more complex flavor and texture. Try using a combination of shrimp, crab, scallops, and mussels.
  • Cook the seafood properly. Overcooked seafood is tough and chewy. Cook it just until it is opaque and tender.
  • Use fresh vegetables. Fresh vegetables will give your salad a crisp and refreshing flavor. Try using a combination of lettuce, tomatoes, cucumbers, and onions.
  • Use a light dressing. A heavy dressing will overpower the delicate flavor of the seafood. Try using a vinaigrette or a light mayonnaise-based dressing.
  • Serve the salad chilled. This will help to keep the seafood fresh and the vegetables crisp.

Conclusion:

Sea shell salad is a delicious and refreshing summer dish. It is easy to make and can be tailored to your own personal taste. You can use any type of seafood or vegetables that you like. Just be sure to use fresh ingredients and cook the seafood properly. Enjoy!
