The secret to a great ice cream sandwich is the cookie. Or in this case, the brookie. Our brookie batter bakes into rounds that are dense and fudgy on the inside and amazingly crackly on the outside. Once they're cool, smush slightly softened ice cream between them-in whatever flavors get your imagination churning.

Number Of Ingredients 12

1 cup unbleached all-purpose flour
1/4 cup Dutch-process cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt (we use Diamond Crystal)
6 ounces semisweet chocolate, such as Baker's, chopped (1 1/2 cups)
1/2 cup vegetable shortening, melted
1 teaspoon pure vanilla paste or extract
2 large eggs
2/3 cup packed light-brown sugar
1/3 cup granulated sugar
Flaky sea salt, such as Jacobsen, for sprinkling
2 pints assorted ice cream, such as pistachio, caramel, chocolate, and berry swirl

Steps:

  • Preheat oven to 350°F, with racks in upper and lower thirds. Line 2 baking sheets with parchment. In a bowl, whisk together flour, cocoa, baking powder, and kosher salt. Melt chocolate in a heatproof bowl set over (but not in) a pot of simmering water, or in the microwave, stirring every 10 seconds.
  • Stir in shortening and vanilla to combine. Beat eggs with both sugars on medium-high speed until pale, fluffy, and doubled in volume, about 5 minutes. Gently fold in flour and chocolate mixtures, alternating in two additions each, just to combine (do not overmix).
  • Scoop 1-ounce (2-tablespoon) balls of dough; transfer to prepared sheets, spaced 2 inches apart. Sprinkle tops with flaky salt. Bake, rotating sheets and rack positions halfway through, until cookies spread and dome, with small cracks beginning to form on tops, 8 to 10 minutes. Let cool on sheets on wire racks 5 minutes, then transfer cookies to racks and let cool completely.
  • Meanwhile, temper ice cream in refrigerator until softened but not melting, about 20 minutes. Sandwich 1/4 cup ice cream between 2 cookies; repeat with remaining ice cream and cookies. Freeze until ice cream is firm, at least 1 hour, then transfer to a freezer bag to store up to 1 week.

2 eggs
2 cups milk
1/3 cup sugar
1 teaspoon vanilla
1 cup heavy whipping cream
sea salt (be careful with this)
blue food coloring (looks better with it) (optional)
green food coloring (looks better with it) (optional)

Steps:

  • Separate the eggs into two good sized bowls.
  • Beat the egg whites until stiff.
  • Mix the egg yolks and sugar until thick.
  • Slowly bring the milk to a boil over medium heat, stirring occasionally.
  • Pour the hot milk into yolk/sugar mixture and mix well.
  • Pour milk/yolk/sugar mixture back into pot and heat on medium until thicker to make a custard (DON'T LET IT BOIL! also, if you can't get it to a custard thickness,just get it as thick as you can).
  • Pour custard in with beaten egg whites and mix well.
  • Add sea salt (keep adding salt until it tastes salty sweet, but be careful not to add to much).
  • Put mixture in fridge to cool.
  • Once cool, add cream and vanilla .
  • (Optional) Add 12 drops of blue coloring, and 3 drops of green coloring.
  • Freeze, following your ice cream maker's instructions.
  • If you don't have an ice cream maker pour mixture into 1 or 2 metal cake pans and set in freezer. Let sit until edges become firm, then remove and mix. Repeat until uniformly frozen.

2 cups 1 pint heavy whipping cream
1 14-ounce can sweetened condensed milk
1/4 cup honey (I like clover honey for this recipe + 1 tablespoon for topping + a little more for serving if desired)
1/2 teaspoon Fleur de sel sea salt + more for serving if desired

Steps:

  • Pour the whipping cream into the bowl of a stand mixer affixed with the whisk attachment. Start out mixing on low speed, then slowly increase speed to high and mix until the whipping cream forms stiff peaks, about 2 minutes. You can also use a bowl and a hand mixer, or a bowl and a whisk and mix by hand (but it'll probably take awhile unless you have superpowers!)
  • Using a spatula, gently fold the sweetened condensed milk, 1/4 cup honey, and 1/2 teaspoon sea salt into the whipped cream. Continue stirring gently until completely combined. Pour into a freezer-safe container with airtight lid. Drizzle the top with 1 tablespoon honey. Seal.
  • Freeze until solid, at least 6 hours.
  • Scoop into cups, bowls, or onto cones; drizzle individual servings with a little more honey and a bonus pinch of sea salt if desired. Serve.
