1/4 pound sliced smoked salmon
12 eggs
1/2 cup heavy cream
Salt and freshly ground black pepper
2 tablespoons butter
12 to 15 blades of fresh chives, finely chopped

Steps:

  • Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.
  • Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.

Time 11m

Yield 4 serving(s)

Number Of Ingredients 8

7 eggs (at room temperature)
1/2 cup cream (125ml thin cream)
salt (to taste)
cracked black pepper (to taste)
40 g butter
2 tablespoons herbs (parsley, chives and dill leaves)
4 bagels (split)
100 g smoked salmon (flaked into pieces)

Steps:

  • Whisk eggs, cream and salt and pepper in a bowl.
  • Melt butter in a non-stick frying pan over medium high heat until foaming.
  • Add egg mixture, sprinkle with herbs and cook for 3 minutes.
  • Gently draw in edges with a fork to allow uncooked egg to run underneath and cook until eggs are just set.
  • Remove from pan and keep warm.
  • Meanwhile, place bagels in a toaster or oven grill (broil) and toast until golden brown.
  • Spoon eggs onto bagels and top with flaked salmon.

Tips:

  • Use fresh herbs: Fresh herbs like chives, dill, and parsley add a burst of flavor to scrambled eggs. Chop them finely just before using for the best results.
  • Don't overcook the eggs: Scrambled eggs should be cooked until they are just set, but still slightly soft and creamy. Overcooked eggs will be dry and rubbery.
  • Add smoked salmon at the end: Smoked salmon is a delicate fish, so it's best to add it to the scrambled eggs just before serving. This will prevent it from overcooking and becoming tough.
  • Serve immediately: Scrambled eggs are best served immediately, while they are still hot and fluffy. They can be served on their own or with toast, bagels, or fruit.

Conclusion:

Scrambled eggs with herbs and smoked salmon is a quick and easy breakfast or brunch recipe that is sure to please everyone at the table. With its simple ingredients and delicious flavor, this dish is a great way to start your day.
