SCRAMBLED EGGS AND SHRIMP

Scrambled Eggs and Shrimp image

I made this on a whim. I just had these things on hand. This is a wonderful combination of eggs, cocktail sauce, and shrimp. It is an interesting mixture of tastes that you wouldn't think would go together, but they do. This goes together very quickly, if you have everything ready to go. This sauce becomes sweet when you cook it. Also I made my own cocktail sauce, but you could use a pre-made sauce. You can cook the eggs in butter instead of oil if desired. Garnish with lemon and parsley.

Categories     Egg     Breakfast     Sauté

Yield 4

Number Of Ingredients 8

4 Tbls olive oil
1 lb assorted mushrooms sliced
8 oz uncooked large shrimp, peeled, deveined, halved lengthwise
8 large eggs beaten to blend
2 oz sliced prosicutto, chopped
4 oz thinly sliced smoked salmon cut into strips
8 slices bread, toasted, cut into wedges
Chopped fresh parsley(optional)

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium heat. Add msuhrooms to skillet. Cover and cook until mushrooms are tender, stirring occasionally, about 12 minutes. Meanwhile, heat 2 tablespoon oil in large nonstick skillet over medium high heat. Add shrimp to skillet and saute until almost opaque, about 2 minutes. Add eggs and stir until about set, about 4 minutes. Add prociutto and sit until eggs are set, about 1 minute. Spoon egg mixture onto platter. Tope with salmon strips. Surround with mushrooms and toast. Garnish with parsley if desired.

Tips:

  • Use fresh ingredients: Fresh eggs and shrimp will give you the best flavor and texture.
  • Don't overcook the eggs: Scrambled eggs should be cooked until they are just set, but not dry. Overcooked eggs will be tough and rubbery.
  • Add seasonings to taste: Salt, pepper, and garlic powder are all classic seasonings for scrambled eggs. You can also add other seasonings, such as herbs, cheese, or hot sauce, to taste.
  • Serve immediately: Scrambled eggs are best served immediately after they are cooked. They will start to lose their flavor and texture if they sit for too long.

Conclusion:

Scrambled eggs and shrimp is a quick, easy, and delicious meal that is perfect for breakfast, lunch, or dinner. With just a few simple ingredients, you can create a flavorful and satisfying dish that the whole family will enjoy.
