Steps:
- In a medium saucepan over low heat, heat the half-and-half, gelatin, and sugar for about 8-10 minutes, stirring frequently, until all the sugar is dissolved and steam starts to form. Do not boil.
- Remove from the heat and cool for about 5 minutes. With a wire whisk, stir in the sour cream and the extracts and combine thoroughly. Pour into a 9-inch glass pie plate and chill for 2-3 hours. Top with the sliced peaches and serve.
Tips:
- Use a heavy-bottomed saucepan to prevent the custard from scorching.
- Stir the custard constantly over medium heat until it thickens and coats the back of a spoon.
- Do not boil the custard, or it will curdle.
- Let the custard cool slightly before pouring it into the ramekins.
- Refrigerate the custard for at least 4 hours, or overnight.
- To brûlée the custard, sprinkle the tops with granulated sugar and use a kitchen torch to caramelize the sugar until it is golden brown.
- Alternatively, you can place the ramekins in a preheated broiler and broil the custard until the tops are caramelized.
- Serve the custard immediately or chill it for later.
