SCOTT'S CHILI
This is my version of chili. Scott was my husband from OH and after being together so many years he only wanted this to be hot! I hope you like it. This can be made as mild or hot as you like depending on the chili powder you use. I use a lot of cumin in this recipe. Sometimes I add more than the 2 tablespoons stated here and this is the only time I really use cumin. There are so many versions of chili out there, I hope you enjoy mine.

SCOTT'S THREE BEAN CHILI
My grandson, Scott, has asked me to teach him to cook. He especially likes Chili and he is very health conscious. I adapted this recipe to keep it simple - not too many or hard to get ingredients.

Steps:
- 1. Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes.
- 2. Add the cumin and cook, stirring, for 1 minute.
- 3. Add the ground beef and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chili powder and red pepper flakes, oregano and salt and pepper. Lower heat and simmer, partially covered, stirring from time to time, for 30 minutes.
- 4. Stir in the beans and continue cooking, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.
Tips:
- Choose high-quality ingredients: Use fresh, flavorful ingredients for the best chili. Choose meat with good marbling for richness, and use a variety of beans for a hearty and flavorful stew.
- Brown the meat and vegetables: Browning the meat and vegetables adds depth of flavor and color to the chili. Do not skip this step.
- Use a variety of spices: Chili is all about the spices. Be generous with the chili powder, cumin, and paprika. You can also add other spices like oregano, garlic powder, and onion powder.
- Let the chili simmer: Simmering the chili for a long time allows the flavors to meld and develop. The longer you simmer it, the better it will taste.
- Top the chili with your favorite toppings: There are endless possibilities when it comes to topping chili. Some popular options include cheese, sour cream, avocado, and onions.
Conclusion:
Scott's chili is a classic recipe that is easy to make and always a crowd-pleaser. With its rich flavor and hearty ingredients, it's the perfect comfort food for a cold day.
