GINGERBREAD COOKIES

Gingerbread Cookies image

These traditional cookies came to The Times by way of Jennifer Steinhauer in an article about her grandmother's beloved Christmas cookie recipes. Isabelle Steinhauer would bake between "15 and 20 varieties each season: cream cheese wreaths shot from a cookie press; papery wafers carefully dipped in colored sugar; elaborate cutout cookies of nursery rhyme characters, their eyes fashioned from metallic dragées that the F.D.A. has written off as inedible; all manner of confections with nuts." There's nothing fancy about these gingerbread cookies, but they are tender, gently spiced (feel free to add more to taste) and completely wonderful with a glass of cold milk. If you don't like using shortening, some readers have had good luck using half solid coconut oil and half softened butter instead.

Time 1h

Yield 3 dozen cookies

Number Of Ingredients 12

1 cup light brown sugar
1 cup light molasses
1 cup vegetable shortening
1 tablespoon baking soda
1 egg, lightly beaten
1/4 teaspoon salt
2 teaspoons baking powder
1 tablespoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
4 to 4 1/2 cups all-purpose flour, more for rolling dough
Royal icing and cinnamon candies, for decorating, optional.

Steps:

  • In a small saucepan, combine brown sugar, molasses and shortening. Place over medium-low heat and stir just until mixture is melted and smooth. Remove from heat and mix in baking soda and 1/4 cup cold water. Set aside and allow to cool to room temperature.
  • Add egg, salt, baking powder, ginger, cinnamon and cloves; stir to mix well. Add 4 cups flour and mix well, adding up to 1/2 cup more if dough seems sticky. Shape into a ball, cover and refrigerate for at least 2 hours, up to 24 hours.
  • Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside. On a lightly floured surface, roll out dough to 1/4-inch thickness, and cut into gingerbread boy shapes with a 5-inch-long cookie cutter. Arrange on baking sheets 1 1/2 inches apart, and bake until risen and no longer shiny, about 10 minutes. Remove from heat and allow cookies to cool. If desired, decorate with royal icing and cinnamon candies. Store in an airtight container.

SCOTS GINGERBREAD (OLD SCOTTISH RECIPE)

Scots Gingerbread (Old Scottish Recipe) image

Here is another old Scottish recipe that is printed on the linen towel I have hanging on my kitchen wall. I love the way people were able to cook back then - with such scanty directions! I think cooks back then just KNEW some things so they didn't have to be put in the recipe. Such as, preheat the oven and what a proper baking...

Categories     Sweet Breads

Time 1h

Number Of Ingredients 7

1 c (8 oz) butter, softened
12 oz flour (1/2 whole wheat if available)
4 oz oats (quick or old fashioned)
1/4 c cream
12 oz sorghum (or 3/4 cup molasses mixed with 3/4 cup dark karo syrup)
1 oz fresh ginger, grated
1/4 c grated lemon peel

Steps:

  • 1. Original version: Beat 8 oz. butter to a cream. Mix with 12 oz. flour, 4 oz. oatmeal, 1/2 gill cream. Stir in 12 oz. treacle, 1 oz. green ginger, 4 oz. lemon peel cut into fine shreds. Work the whole into a light dough. Bake in a greased tin for 45 minutes.
  • 2. Modern version: Cream the butter. Beat in flour, oats, and cream. Add in sorghum, ginger, and lemon peel. (This looks like a lot of peel. I wouldn't pack it down in the cup.) Combine well.
  • 3. Preheat oven to 350-375 degrees. Grease a 9 x 13 inch cake pan. Spread batter into prepared pan.
  • 4. Bake at 350 to 375 degrees about 40-45 minutes. Watch carefully so it doesn't burn. Since no temperature was given in the recipe, and temperatures varied greatly back then, it's hard to judge how long to cook it.
  • 5. Cool 10 minutes in pan. May cut and serve from pan, or turn out onto serving plate and slice to serve.

Pour into the prepared pan and bake for about 35 minutes, until a toothpick comes out clean. Set aside to cool completely.

Tips:

  • To make the gingerbread moist and fluffy, be sure to cream the butter and sugar together until light and fluffy. This will help to incorporate air into the mixture, which will make the gingerbread rise more.
  • Do not overmix the batter, as this can make the gingerbread tough. Mix just until the ingredients are combined.
  • Be sure to grease and flour the baking pan before adding the batter. This will help to prevent the gingerbread from sticking to the pan.
  • Bake the gingerbread in a preheated oven. This will help to ensure that the gingerbread bakes evenly.
  • Do not overbake the gingerbread. Overbaked gingerbread will be dry and crumbly. The gingerbread is done when a toothpick inserted into the center comes out clean.
  • Allow the gingerbread to cool completely before frosting. This will help to prevent the frosting from melting.
