Tips:

  • Use Fresh Molasses: Fresh molasses will lend the cookies a richer flavor. If your molasses is old or crystallized, you can microwave it for a few seconds to soften it.
  • Don't Overmix the Dough: Overmixing the dough will result in tough cookies. Mix just until the ingredients are combined.
  • Chill the Dough: Chilling the dough for at least 30 minutes before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the Cookies at a Low Temperature: Baking the cookies at a low temperature (325°F) will help them develop a chewy texture.
  • Don't Overbake the Cookies: Overbaking the cookies will make them dry and crumbly. Bake them just until the edges are set and the centers are still slightly soft.

Conclusion:

Scotch molasses cookies are a delicious and classic holiday treat. With their soft and chewy texture, rich molasses flavor, and hints of spice, these cookies are sure to be a hit with everyone. By following these tips, you can make perfect Scotch molasses cookies that will be enjoyed by family and friends for generations to come.
