This uses nut butter instead of almond flour or coconut flour, since the flours can sometimes be harder for people in an IBD flare. MELT IN A 9" X 13" PAN
4 Tbsp butter (half a stick)
ADD TO PAN:
2 apples, peeled, cored & cut in chunks
cinnamon generously sprinkled over apples
MIX TOGETHER IN A BLENDER, THEN POUR OVER APPLES IN PAN:
6 eggs
1 1/2 Tbsp cashew butter
1 c scd yogurt
1/4-1/2 tsp salt (it seemed a bit salty at 1/2 tsp without additional toppings)
1 tsp vanilla extract
1 tsp almond extract
1 tsp frontier co-op lemon flavoring

Steps:

  • 1. Turn oven to 425°F. Melt butter in the 9" x 13" pan.
  • 2. Place peeled apple chunks in the pan, generously sprinkle with cinnamon, and return the pan to the oven.
  • 3. Place the cashew butter with 4 eggs in the blender, and blend till smooth. Add the other 2 eggs & rest of the ingredients (yogurt, salt, extracts & flavoring), and blend again.
  • 4. Pour over the apples in the pan, then bake for 20-25 minutes at 425° F, until top is evenly & nicely browned. Cut into 8 slices & enjoy warm. Refrigerate leftovers. Best reheated, but not bad even cold. Easy & quick to grab meal or snack. Can serve with SCD yogurt made with whole milk, half & half or cream, nut butters, any fruit that is tolerated (blueberries are particularly good), SCD homemade lemon curd (great when eating with blueberries), butter, honey, SCD legal apple or pear sauce, or similar toppings if desired, to up the calories. It is tasty all by itself, though.

3 Golden Delicious apples - peeled, cored, and thinly sliced
⅔ cup water
2 teaspoons cold butter, cut into small pieces
1 ½ teaspoons all-purpose flour
1 teaspoon cornstarch
½ cup brown sugar
¼ teaspoon ground cinnamon
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer apple slices in the bottom of an 8-inch glass baking dish.
