1 box Betty Crocker™ Super Moist™ yellow or chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
2 containers Betty Crocker™ Rich & Creamy vanilla frosting
Betty Crocker™ classic and neon gel food colors (orange, purple, yellow, blue and lime green)
1 package (0.88 oz) Betty Crocker™ Candy Shop candy eyeballs
2 tubes (0.68 oz each) Betty Crocker™ black decorating gel

Steps:

  • Heat oven to 375°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • Divide frosting into five separate small bowls. Stir 1 teaspoon desired color gel food color into each bowl. Spoon each color frosting into separate decorating bag fitted with desired tip. Pipe frosting on cupcakes to look like monster's fur.

9 tablespoons unsweetened cocoa powder
5 tablespoons boiling water, or more if needed
¾ cup unsalted butter
¾ cup white sugar
2 tablespoons white sugar
1 cup all-purpose flour
2 teaspoons baking powder
3 eggs
1 teaspoon vanilla extract
4 cups confectioners' sugar
1 ¾ cups peanut butter
1 cup white chocolate chips
¼ cup butter
1 (1.5 ounce) tube red decorating gel
1 (16 ounce) package prepared chocolate frosting
1 (1.5 ounce) tube white decorating gel

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Sift cocoa powder into a large bowl and add 5 tablespoons boiling water. Stir into a thick paste, adding more water, 1 tablespoon at a time, if needed. Add 3/4 cup butter and 3/4 cup plus 2 tablespoons sugar and beat with an electric mixer until smooth and creamy. Beat in eggs one at a time, beating well after each addition, until batter is smooth.
  • Mix flour and baking powder in a bowl and stir into the batter until well combined. Spoon batter into the prepared muffin cups, filling each 2/3 to the top using an ice cream scoop.
  • Bake in the preheated oven until tops spring back when lightly pressed and a toothpick comes out clean, 10 to 15 minutes. Allow to cool in muffin tin for a few minutes; transfer to wire rack and cool completely, about 1 hour.
  • Beat confectioners' sugar, peanut butter, 1/4 cup butter, and vanilla extract in a bowl until a thick dough forms. Refrigerate for 30 minutes.
  • Line a baking sheet with baking parchment.
  • Remove the peanut butter mixture from the fridge and roll into small balls to make monster eyes. Chill mixture or moisten hands if it starts to stick. Arrange balls on the prepared baking sheet and freeze for 30 minutes.
  • Place white chocolate in top of a double boiler over simmering water. Stir continuously, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Remove the eyes from the freezer and individually pick them up with a toothpick. Dip balls into melted chocolate leaving a small circle on one side blank. Twirl the toothpick to remove excess chocolate and put back on the parchment lined baking sheet.
  • Dig out a bit of the peanut butter mixture from each ball where it isn't covered with chocolate to make room for the red decorating gel. Fill the holes with red decorating gel.
  • Frost cupcakes with chocolate frosting. Place 2 peanut butter eyes on top. Draw on a mouth with the white decorating gel.

1 (18.25 ounce) package devil's food cake mix (such as Duncan Hines®)
1 cup water
3 eggs
⅓ cup vegetable oil
1 ½ (16 ounce) packages prepared vanilla frosting
1 (7 ounce) pouch prepared chocolate frosting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line two 12-cup muffin tins with paper liners, preferable dark-colored or Halloween-themed ones.
  • Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened, about 30 seconds. Beat at medium speed until batter is smooth and creamy, about 2 minutes. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 18 to 21 minutes. Remove from oven and cool tins on a wire rack for 15 minutes. Remove cupcakes from the tins and cool completely on a wire rack before decorating, about 1 hour.

25g cocoa powder
175g light muscovado sugar
85g unsalted butter , melted
5 tbsp vegetable or sunflower oil
150g pot fat-free natural yogurt
1 tsp vanilla extract
3 large eggs
85g unsalted butter , softened
1 tbsp milk
½ tsp vanilla extract
200g icing sugar , sifted
food colourings (optional)
sweets and sprinkles, to decorate

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a 12-hole muffin tin with deep cake cases. Put all the cake ingredients into a large bowl and beat together with electric hand beaters until smooth. Spoon the mix into the cases, then bake for 20 mins until risen and a skewer inserted into the middle comes out dry. Cool completely on a rack. Can be made up to 3 days ahead and kept in an airtight container, or frozen for up to 1 month.
  • For the frosting, work the butter, milk and vanilla into the icing sugar until creamy and pale. Colour with food colouring, if using, then create your own gruesome monster faces using sweets and sprinkles.
