This amazing ham salad is filled with so much flavor! Super simple and easy to make, use some leftover ham and you can whip this up for lunch in under 10 minutes!

2 cups cooked boneless ham
3 large boiled eggs (chopped)
1/2 cup mayonnaise
1 stalk celery (chopped)
1/4 a onion (chopped)
2 tablespoons relish
1 tablespoon mustard
Salt and pepper to taste
1 teaspoon parsley (chopped)
Juice from half a lemon

Steps:

  • In a food processor add the ham and pulse until it is small and crumbly. You can also chop it into really small pieces.
  • In a medium bowl add the ham, eggs, mayonnaise, celery, onion, relish, mustard, salt and pepper, parsley, and lemon juice. Stir all the ingredients together. Serve with crackers, or on bread as a sandwich.

1 fresh pineapple, leave outer skin on
2 cups cooked ham, cut into chunks
6 cherry tomatoes, halved
1 cup sliced celery
1/4 cup sliced green onion
1/2 cup low-fat sour cream
1/2 teaspoon dill weed
1/2 teaspoon spicy mustard
1/4 teaspoon salt
1/4 teaspoon lemon juice
1/8 teaspoon garlic salt
1/8 teaspoon pepper

Steps:

  • Cut pineapple in half lengthwise through crown. Remove fruit. leaving shells intact. Core and dice fruit.
  • In large bowl, put together pineapple, ham chunks, cherry tomatoes, celery and green onions.
  • In small bowl, put together all other ingredients for dressing, blending well.
  • Spoon dressing over pineapple combination, tossing gently to mix.
  • Pile salad into pineapple shells to serve.

Dill Dressing
3/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup Dijon mustard
3/4 cup packed chopped fresh dill
Salad
2 10-ounce packages frozen petite green peas, thawed, drained or 3 pounds fresh peas, shelled
1 pound red potatoes, peeled, cut into 1/2-inch dice
12 ounces smoked ham (such as Black Forest), diced
1 15-ounce can black-eyed peas, rinsed, drained
1 large red bell pepper, diced
1 large yellow bell pepper, diced
1 cup diced red onion

Steps:

  • For Dressing:
  • Whisk first 3 ingredients together in small bowl. Stir in dill. Season generously with salt and pepper.
  • For Salad:
  • If using fresh peas, steam until tender, about 3 minutes. Do not precook frozen peas. Transfer peas to bowl. Steam potatoes over boiling water until tender, about 15 minutes. Cool completely. 1/4 cup milk
1/4 cup dill, fresh, snipped

1 (15 ounce) can salmon, drained, skinned and flaked
1/4 cup scallion, finely chopped
12 ounces shell macaroni, medium-sized, cooked
4 eggs, hard-boiled (sliced or quartered)
