Have not had the chance to try this yet, but this is my kind of dish. Can be prepared ahead and baked at dinner time. Sounds wonderful!

1 tablespoon olive oil
1/3 cup chopped onion
1 tablespoon minced garlic
1 (28 ounce) can whole tomatoes with juice, undrained
1 (8 ounce) can tomato sauce
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/8 teaspoon black pepper
1 tablespoon chopped fresh basil
1 lb penne pasta
8 ounces large shrimp, peeled and deveined
1/2 cup butter
1 lb bay scallop
1/2 cup grated parmesan cheese

Steps:

  • Grease a 9x13 baking dish and set aside.
  • Heat oil in saucepan, add onion and garlic and saute for 2 minutes.
  • Add tomatoes, sauce, salt, red pepper, black pepper and basil.
  • Simmer for 30 minutes, uncovered.
  • Cook Penne pasta for 9 minutes, drain and add to prepared baking dish.
  • In separate saucepan, melt butter, add shrimp and cook for 2 to 3 minutes.
  • Add scallops and cook for 30 seconds, just to coat.
  • Spoon seafood over noodles and top with tomato sauce.
  • Sprinkle with Parmesan cheese.
  • Bake, covered for 35 minutes at 350 degrees, then uncover and bake for 10 minutes more.

2 pounds Scallops (I prefer
the large)
1/2 cup Light Cream
1/4 cup White Wine
1 Tablespoon Minced Onion
1/8 teaspoon White Pepper
1/8 teaspoon Ground Ginger
1 1/2 teaspoons Salt
COMBINE & USE FOR TOPPING:
2 Tablespoons Melted Butter
2 Tablespoons Parmesan
2 Tablespoons PankoBreadcrumbs

Steps:

  • Preheat oven to 300 degrees. Arrange scallops at bottom of well-greased 2 quart casserole dish. Combine next 6 ingredients and pour over scallops. Combine last 3 ingredients and put over top of scallops. Cook casserole for 30 minutes at 300 degrees,check for doneness, then raise heat to 450 degrees for 5 minutes to brown.
