Provided by Southern Living Editors

Categories     Casserole

Time 2h35m

Yield Serves 8

Number Of Ingredients 16

1 (4-lb.) whole chicken
4 tablespoons kosher salt
1 bay leaf
8 ounces uncooked spaghetti
3 tablespoons butter
1 large yellow onion, chopped
½ medium-size green pepper, coarsely chopped
2 celery ribs, chopped
2 garlic cloves, minced
1 (10 ¾-oz.) can cream of mushroom soup
1 (28-oz.) can diced tomatoes, drained and chopped
1 teaspoon Worcestershire sauce
4 drops of hot sauce
⅛ teaspoon freshly ground black pepper
Vegetable cooking spray
1 cup (4 oz.) shredded medium Cheddar cheese

Steps:

  • Place first 3 ingredients and water to cover in a large Dutch oven. Bring to a boil over high heat. Cover and reduce heat to medium-low. Simmer 1 hour or until tender. Remove chicken, reserving broth in Dutch oven. Cool chicken completely (about 20 minutes). Discard bay leaf. Skin and bone chicken, and cut meat into pieces.
  • Preheat oven to 350°F. Remove and reserve ¼ cup chicken broth. Bring remaining broth in Dutch oven to a boil over high heat. Break spaghetti into thirds, and cook in broth 12 to 15 minutes or until tender; drain well, discarding broth. Return spaghetti to Dutch oven.
  • Melt butter in a large skillet over medium-high heat. Add onion and next 3 ingredients, and sauté 5 minutes or until tender; add to spaghetti. Stir together soup and ¼ cup reserved broth; stir into spaghetti mixture. Stir in chicken, tomatoes, and next 3 ingredients. Add salt to taste. Spoon mixture into a lightly greased (with cooking spray) 13- x 9-inch baking dish. Top with cheese.
  • Bake at 350°F for 15 to 20 minutes or until cheese melts.

CHICKEN SPAGHETTI

With spaghetti and mushroom sauce, and light and dark meat chicken with bell peppers, Ree Drummond's casserole is like two meals in one. Cooking the spaghetti in the same liquid as the chicken infuses it with flavor, and the Cheddar thickens the sauce so it coats each piece of meat.

Categories     main-dish

Time 1h40m

Yield 8 servings

Number Of Ingredients 10

1 whole raw chicken, cut into 8 pieces
1 pound thin spaghetti, broken into 2-inch pieces
2 1/2 cups shredded sharp Cheddar
1/4 cup finely diced green bell pepper
1/4 cup finely diced red bell pepper
1 teaspoon seasoned salt
1/8 to 1/4 teaspoon cayenne pepper
Two 10 3/4-ounce cans cream of mushroom soup
1 medium onion, finely diced
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of water to a boil. Add the chicken pieces to the boiling water and boil for a few minutes, then return the heat to medium-low and simmer, 30 to 45 minutes.
  • Remove the chicken and 2 cups of the chicken cooking broth from the pot. When the chicken is cool, remove the skin and pick out the meat (a mix of dark and white) to make 2 generous cups.
  • Cook the spaghetti in the same chicken cooking broth until al dente. Do not overcook. When the spaghetti is cooked, combine with the chicken, mushroom soup, 1 1/2 cups cheese, the green peppers, red peppers, onions, seasoned salt, cayenne, and sprinkle with salt and pepper. Stir in 1 cup of the reserved chicken cooking broth, adding an additional cup if needed.
  • Place the mixture in a casserole pan and top with the remaining 1 cup cheese. Cover and freeze up to 6 months, cover and refrigerate up to 2 days or bake immediately until bubbly, about 45 minutes. (If the cheese on top starts to get too cooked, cover with foil).

SCALLOPED CHICKEN - DELISH

Scalloped Chicken - Delish image

This was our quick after Church lunch. It can be ready in 15 minutes if using Rotisserie chicken. Or,I boiled three chicken breasts last night to be ready for today. All I had to do was shred them. Kids just love this meal. I don't make it often enough. You can serve alone, or add your favorite veggie on the side. Either way it...

Time 20m

Number Of Ingredients 10

1 box stove top stuffing - i used aldi brand, was just as good
1 1/4 c chicken broth
1/4 c butter
2 stalks celery, chopped small
1/2 small onion,chopped fine
1 14.5 ounce can, cream of chicken soup. or can use cream of mushroom
1 c sour cream
2 c cooked, shredded chicken
salt and pepper to taste
1/2 small container fried onions ( durkee ) - optional

Steps:

  • 1. The last step of this recipe can be left out. My kids just love the Durkees onions, so I add the chicken mix to a 2.5 quart casserole. Sprinkle on the onions and broil 3 - 5 minutes. Watch closely that they don't burn. I just about burnt mine...lol!
  • 2. In a large skillet or dutch oven. Add broth, butter, celery and onions. Bring to a slow boil; and cook onions and celery till tender. About 5 minutes.
  • 3. Turn down the heat to low; add the stuffing mixture. Stir. Cover and set aside for 5 minutes.
  • 4. Now, stir in the cream of chicken soup. Then, stir in the sour cream. Next the chicken. Heat through. This can be served now, if not wanting to broil with the onion topping.
  • 5. I then scooped the chicken mixture into a 2.5 quart casserole. Cover the top with crushed onions and broiled 3 - 5 minutes or until golden brown.
  • 6. Salt and pepper to taste. Enjoy!
