A cookbook my husband gave me as a wedding gift included this recipe-he remembers having the dish as a child at church dinners. Now I make it whenever I need a special vegetable side. It's rich and cheesy even after reheating.

Tips:

  • Choose the right carrots: For the best flavor and texture, use young, tender carrots. Avoid carrots that are too large or have a woody texture.
  • Peel and slice the carrots evenly: This will ensure that they cook evenly. If the carrots are not evenly sliced, some pieces may be undercooked while others are overcooked.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of the casserole. Use a cheese that melts well and has a good flavor. Cheddar, Gruyère, and Parmesan are all good choices.
  • Don't overcook the carrots: The carrots should be cooked until they are tender but still have a slight crunch. If you overcook them, they will become mushy.
  • Season the casserole to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of nutmeg or garlic powder for extra flavor.

Conclusion:

Scalloped carrots casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover carrots, and it is also a good source of vitamins and minerals. With its creamy cheese sauce and tender carrots, this casserole is sure to be a hit with everyone at the table.
