EASY SMOKED SALMON PASTA

Easy Smoked Salmon Pasta image

A really quick, easy sauce for 'pasta asciutta,' which means 'dry pasta.' It's not a dish over-loaded with sauce, but one that appreciates the simple smokiness of good smoked salmon. Serve sprinkled with some Parmesan or garnished with some parsley. This is not a creamy, thick sauce. Just one that really brings out the simple, yet fantastic flavors of smoked salmon. Enjoy!

Yield 2

Number Of Ingredients 7

1 (8 ounce) package linguine pasta
1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
1 ounce smoked salmon, cut into small pieces
1 tablespoon reduced-fat cream cheese
3 tablespoons milk

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.
  • Melt the butter with the olive oil in a saucepan over medium-low heat; when the mixture begins to bubble, add the shallots and cook until softened. Stir the salmon, cream cheese, and milk into the shallot mixture. Mix the reserved water from the pasta into the mixture. Transfer to a large bowl and toss with the pasta to serve.

ONE-POT SPRING PASTA WITH SMOKED SALMON

One-Pot Spring Pasta with Smoked Salmon image

Adding asparagus and frozen peas directly to the boiling pasta during the last couple minutes of cooking means everything for this seasonal, fresh dinner can be made in one pot. Smoked salmon adds a nice, rich saltiness (and extra protein!) without any extra work for the cook-just drape the slices over each bowl before serving.

Yield 4 servings

Number Of Ingredients 11

12 oz. linguine or other long pasta
3/4 tsp. kosher salt, plus more
1 bunch asparagus (about 1 lb.), trimmed, cut into 1"-1½" pieces
1 (10-oz.) bag frozen peas
4 Tbsp. cold unsalted butter, cubed
1 Tbsp. finely grated lemon zest
3 Tbsp. fresh lemon juice
1 cup sour cream, divided
1 1/2 tsp. freshly ground pepper, plus more
6 oz. smoked salmon, sliced into ½" strips
1 cup basil leaves

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, 7 minutes (or 2 minutes less than package instructions). Add asparagus and continue to cook, stirring, 1 minute. Add peas and continue to cook until cooked through, about 1 minute more. Drain pasta, asparagus, and peas together, reserving 1/2 cup pasta cooking liquid.
  • Transfer pasta and vegetables to a large bowl. Add butter, lemon zest, lemon juice, 1/2 cup sour cream, 1 1/2 tsp. pepper, and remaining 3/4 tsp. salt. Toss, adding reserved pasta cooking liquid bit by bit as needed, until a smooth sauce coats pasta (you might not need all the liquid).
  • Divide pasta among bowls. Top with salmon, basil, and remaining 1/2 cup sour cream. Season with lots of pepper.

GREAT NORTHWEST SMOKED SALMON PASTA

Great Northwest Smoked Salmon Pasta image

A re-creation of a wonderful pasta dish I ate on Whidbey Island in Wash. State, this is fresh with tomatoes, mushrooms, and spinach.

Provided by Northwest Lynnie

Categories     Low Cholesterol

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

8 ounces dried linguine
8 ounces smoked salmon (my favorite is alder smoked salmon from Trader Joe's. ( DO NOT USE LOX STYLE smoked salmon))
2 tablespoons olive oil
2 large shallots, minced
1 clove garlic, crushed
8 ounces mushrooms, sliced
2 large roma tomatoes, diced
1 (6 ounce) package organic baby spinach leaves, divided
2 cups chicken broth (or more)
fresh ground pepper

Steps:

  • Saute shallots and garlic in olive oil in a large skillet until soft.
  • Add mushrooms and tomatoes, saute for another 2 mins.
  • Add chicken broth and 3/4 of the spinach; gently simmer over low heat while pasta cooks.
  • Cook pasta a little less time than according to pkg directions.
  • Drain pasta and gently stir it into the sauce.
  • Simmer gently until pasta absorbs some of the sauce, and is cooked to your preference.
  • Crumble the salmon into chunks and gently stir it into the pasta.
  • Add more chicken broth if needed and heat through.
  • Serve on a bed of the reserved spinach and sprinkle with freshly ground pepper to taste.

Tips:

  • Choose High-Quality Ingredients: Opt for fresh, succulent scallops and thinly sliced smoked salmon to ensure the best flavor and texture in your pasta dish.
  • Season Wisely: Don't shy away from herbs and spices. A blend of garlic, lemon zest, paprika, and parsley adds depth and complexity to the dish.
  • Cook Scallops Properly: Pan-sear the scallops briefly on both sides to achieve a golden-brown crust while maintaining a tender, juicy interior.
  • Reserve Pasta Water: Don't pour it all down the drain! Reserve some pasta water to create a silky, flavorful sauce that will coat the pasta perfectly.
  • Combine Ingredients at the Right Time: Add the scallops and smoked salmon towards the end of cooking to prevent overcooking and preserve their delicate flavors.

Conclusion:

Scallop and smoked salmon pasta is a delightful seafood symphony that marries the sweet, briny notes of scallops with the smoky richness of salmon. By following these tips, you can create a restaurant-worthy dish at home that will impress your family and friends. Remember to use fresh, high-quality ingredients, season wisely, cook the scallops with care, and combine all the elements at the right time. Enjoy this delectable pasta dish that showcases the harmony of flavors from the sea!
