Different colorful pasta dish. Use veggie broth and it's vegetarian. Use low fat cream cheese and it's low fat. Try using different veggies to suit you. Very versitile for different tastes. I have also served it as a side dish.

Categories     Onions

Time 10m

Yield 2-4 serving(s)

Number Of Ingredients 6

1 bunch scallion, roots trimmed and white part cut into a 4-inch length
2 medium carrots, peeled and cut into sticks
1 tablespoon olive oil
1 tablespoon butter
1/4 teaspoon sugar
2 tablespoons soy sauce

Steps:

  • Saute the scallions in the olive oil for 3 minutes.
  • Add the carrots and continue to cook until vegetables begin to soften and turn golden.
  • Add butter, soy sauce and sugar and cook 30 seconds more.

Tips:

  • Choose the right scallions and carrots: Select fresh, firm scallions with bright green tops and tender white bulbs. Choose carrots that are smooth, brightly colored, and free from blemishes.
  • Prepare the vegetables: Trim the scallions, removing the root ends and any wilted or bruised leaves. Peel and slice the carrots into thin strips or rounds.
  • Use high-quality oil: Olive oil or avocado oil are good choices for sautéing scallions and carrots. These oils have a high smoke point, meaning they can be heated to a high temperature without burning.
  • Don't overcrowd the pan: When sautéing the vegetables, make sure not to overcrowd the pan. This will prevent them from cooking evenly.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a drizzle of balsamic vinegar for extra flavor.

Conclusion:

Scallions and carrots are a versatile and delicious combination that can be used in a variety of dishes. Whether you're making a stir-fry, soup, salad, or simply sautéing them as a side dish, these two vegetables are sure to add flavor and nutrition to your meal. With their vibrant colors and slightly sweet flavor, scallions and carrots are a great way to brighten up any dish.
