Time 30m

Yield 2

Number Of Ingredients 9

1 pinch salt
½ cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
¼ cup dry white wine
¼ cup lemon juice
¼ cup cold unsalted butter, cut into pieces
2 tablespoons capers, drained
2 lemon wedges

Steps:

  • Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
  • Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
  • Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
  • To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.

LEMON PEPPER BACON CHICKEN SANDWICH - PIONEER WOMAN

Lemon Pepper Bacon Chicken Sandwich - Pioneer Woman image

Another winner from the Pioneer Woman. I love that I can have these sandwiches on the table in 20 minutes. It's also a very flexible recipe; you can choose your cheese and your sandwich toppings. Delicious with mayonnaise & dijon mustard, and lettuce & tomato.

Provided by appleydapply

Categories     Lunch/Snacks

Time 20m

Yield 4 sandwiches, 4 serving(s)

Number Of Ingredients 9

4 boneless skinless chicken breasts (6-8 oz each)
lemon pepper seasoning
8 slices pepper bacon
4 slices cheddar cheese (or your favorite cheese)
4 sandwich buns
mayonnaise (or dressing of your choice)
tomatoes, slices (optional)
4 lettuce leaves (optional)
sliced onion (optional)

Steps:

  • On a cutting board, pound the chicken breasts briefly with a mallet to flatten the thick parts so they'll cook more evenly.
  • Cut each strip of bacon in half. Arrange strips in a large (12") skillet and cook over medium heat until it reaches your desired crispness. Remove cooked bacon from skillet and put on paper towels to absorb excess grease.
  • Pour off all but approximately 1 tablespoon of the bacon grease. (you can pour it all off and then add back 1 TB - you decide!).
  • Heat skillet again, over medium-low to medium heat.
  • Liberally sprinkle both sides of the chicken breasts with lemon pepper. When the skillet is hot, place all 4 chicken breasts in it. Cook approximately 4 minutes on one side.
  • Flip the chicken breasts over. Arrange the bacon slices on top. Then place sliced cheese on top of the bacon.
  • Cover the skillet and cook for about another 4 minutes. The cheese should be well-melted. To test doneness, poke the fattest part of a breast with a sharp knife - you shouldn't see any pink meat left in the middle.
  • Dress your bun with mayonnaise, a dijon/mayonnaise combo, or ranch dressing.
  • Put chicken on bun. It tastes great without veggies, but you can also add leafy lettuce, sliced tomato, and sliced onion.

LEMON-CAPER BUTTER AND SMOKED SALMON TEA SANDWICHES

Lemon-Caper Butter and Smoked Salmon Tea Sandwiches image

Aromatic dill and smoked salmon are a classic pairing, while a simple-yet-flavorful lemon-caper butter add zing to these tea sandwiches.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Yield Makes 2 dozen

Number Of Ingredients 8

3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 teaspoon freshly squeezed lemon juice
Grated zest of 1 lemon
6 tablespoons capers
1/4 teaspoon coarse salt
24 thin slices black or pumpernickel bread
14 ounces smoked salmon, thinly sliced
1 large bunch fresh dill, cleaned and trimmed, tough stems removed

Steps:

  • In the bowl of a food processor fitted with the metal blade, combine butter, lemon juice, zest, capers, and salt. Pulse until combined and most of the capers are broken up, about 15 seconds.
  • Spread a thin layer of caper butter on two slices of bread. Cover one slice with a layer each of salmon and dill sprigs, and top with other bread slice. Use a serrated knife to trim crusts and cut in half diagonally into two triangles. Repeat with remaining ingredients. Cover with damp papers towel until ready to serve.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will result in a better-tasting dish. When possible, use organic or locally-sourced ingredients.
  • Don't overcrowd the pan: When searing the chicken, make sure to give it enough space in the pan so that it can brown evenly. If the pan is too crowded, the chicken will steam instead of sear.
  • Use a well-seasoned cast-iron skillet: A well-seasoned cast-iron skillet will help to give the chicken a nice, crispy crust. If you don't have a cast-iron skillet, you can use a regular non-stick skillet, but make sure to heat it over medium-high heat before adding the chicken.
  • Cook the chicken until it is cooked through: Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 165 degrees Fahrenheit. If the chicken is not cooked through, it will be unsafe to eat.
  • Serve the chicken immediately: SBD Lemon Caper Chicken is best served immediately after it is cooked. The crispy crust will start to soften if the chicken sits for too long.

Conclusion:

SBD Lemon Caper Chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of lemon, capers, and butter creates a flavorful sauce that pairs perfectly with the crispy chicken. This dish can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.
