Tips:

  • Choose the right cabbage: Savoy cabbage is the best choice for this recipe, as it has a delicate flavor and tender texture. However, you can also use green cabbage or Napa cabbage if you prefer.
  • Wash the cabbage thoroughly: Savoy cabbage has a lot of nooks and crannies, so it's important to wash it thoroughly to remove any dirt or grit. Cut the cabbage into thin strips.
  • Don't overcrowd the pan: When cooking the cabbage, don't overcrowd the pan. This will prevent the cabbage from cooking evenly.
  • Cook the cabbage in batches: If you have a lot of cabbage, cook it in batches. This will help to ensure that the cabbage cooks evenly.
  • Season the cabbage to taste: Season the cabbage with salt, pepper, and other spices to taste. You can also add a splash of vinegar or lemon juice for a bit of tang.

Conclusion:

Savoy cabbage with pancetta is a delicious and easy-to-make side dish. It's perfect for a weeknight dinner or a special occasion. The cabbage is tender and flavorful, and the pancetta adds a salty, savory flavor. This dish is sure to please everyone at your table.
