Homemade Vegetable Beef Soup image

My mom made this soup when I was young. I have always loved her soups. When I was able to start cooking by myself I fell in love and have added and taken items away, but my fiance love my soups. And he isn't even big on soups. I hope your family enjoys the soup as much as mine does.

Tips:

  • Use high-quality beef broth. This will make a big difference in the flavor of your soup. Look for a broth that is made with real beef bones and vegetables, and avoid broths that are made with bouillon cubes or powders.
  • Don't overcrowd the pot. If you add too many vegetables to the pot, they will not cook evenly and the soup will be watery. Add the vegetables in batches, and be sure to stir them frequently so that they cook evenly.
  • Season the soup to taste. Add salt, pepper, and other seasonings to taste. You can also add a bit of acidity, such as lemon juice or vinegar, to brighten the flavor of the soup.
  • Let the soup simmer. Simmering allows the flavors to meld and the vegetables to soften. Simmer the soup for at least 30 minutes, or longer if you have time.
  • Serve the soup hot. Vegetable beef soup is best served hot, with a side of bread or crackers.

Conclusion:

Savory vegetable beef soup is a delicious and hearty soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a vegetable beef soup that your whole family will love.
