My family loved this casserole, even the ones who don't like mushrooms, she just picked them out...LOL! It's quite savory and delicious! If you don't like mushrooms, add a different veggie instead..I used mushrooms, because they needed to get used and were quite tasty with the spinach. Enjoy!

Tips:

  • Use fresh spinach. Fresh spinach is more flavorful and nutritious than frozen spinach. If you have access to fresh spinach, use it in this recipe.
  • Squeeze the excess water out of the spinach. When you cook spinach, it releases a lot of water. If you don't squeeze the excess water out, the casserole will be watery and bland.
  • Use a variety of cheeses. The combination of cheeses in this recipe is what makes it so flavorful. You can use any type of cheese you like, but a combination of Parmesan, cheddar, and mozzarella is a classic.
  • Don't overcook the casserole. The casserole is done when the cheese is melted and bubbly and the spinach is tender. If you overcook the casserole, the spinach will become mushy.
  • Serve the casserole immediately. The casserole is best served hot out of the oven. You can also make it ahead of time and reheat it before serving.

Conclusion:

This savory spinach casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to get your kids to eat their vegetables. The combination of spinach, cheese, and bread crumbs makes this casserole a hit with everyone.
