1/2 cup molasses
1/4 cup coarse-grained Dijon mustard
2 tablespoons apple cider vinegar
1 teaspoon salt
4 (3/4 lb) pork tenderloin
vegetable oil cooking spray

Steps:

  • Combine first 4 ingredients and brush half of the mixture over pork.
  • Cover and chill 8 hours.
  • Chill remaining glaze.
  • Spray grill rack with cooking spray.
  • Grill pork with lid covered, 18 to 20 minutes or until a meat thermometer inserted into thickest portion registers 160 degrees.
  • While cooking, turn once and baste with reserved glaze during last 8 minutes.

1.5 to 2 lb pork tenderloin, silver skin removed
2 Tbsp olive oil
2 to 3 Tbsp fresh lemon, lime or orange juice
2 tsp herbs de provence (can substitute italian seasoning)
1 tsp granulated garlic powder
1 tsp cumin
1 tsp kosher salt
1/2 tsp smoked paprika
1/4 tsp black pepper

  • 1. Preheat oven to 400F. Lightly oil a large baking pan or casserole dish. Place tenderloin(s) in pan, pierce all over with a fork, and rub olive oil onto all sides.
