PANKO-CRUSTED SALMON

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 9

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

PANKO CRUSTED SALMON

A simple recipe that is sure to impress. This recipe is written for individual fillets but it can easily be done with a whole salmon fillet. Simply cook the whole fillet how you normally would and add topping and broil at the end.

Time 19m

Yield 1 serving, 1 serving(s)

Number Of Ingredients 8

1 skinless salmon fillet
2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 teaspoon garlic
1 teaspoon finely chopped parsley
1/4 cup panko breadcrumbs
3 tablespoons olive oil
salt and pepper

Steps:

  • Season salmon to taste with salt and pepper, as well as any other herbs you enjoy on your salmon.
  • Combine Dijon mustard, mayo, and garlic.
  • Heat 2 tablespoons olive oil in non stick sauté pan.
  • Toss bread crumbs with olive oil and mix in parsley.
  • Sear salmon 3 minutes on each side. (cooking time dependent on size of salmon fillet).
  • Spread mayo mix on top of salmon filet.
  • Press breadcrumbs into the mayo mix on the top of salmon.
  • Place salmon under broiler for roughly 3 minutes or until the breadcrumbs are golden brown.
  • Serve and enjoy!

Tips:

  • For the crispiest coating, use fresh panko breadcrumbs. If you don't have fresh panko, you can make your own by toasting regular breadcrumbs in a pan with some butter or oil until they're golden brown.
  • To ensure the salmon is cooked evenly, make sure the fillets are all about the same thickness. If they're not, the thicker fillets will take longer to cook than the thinner ones.
  • Don't overcrowd the pan when you're cooking the salmon. If you do, the salmon will steam instead of fry and you won't get that nice crispy coating.
  • If you're using a nonstick pan, you don't need to add any additional oil. However, if you're using a regular pan, you'll need to add a little bit of oil to prevent the salmon from sticking.
  • Serve the salmon immediately with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or rice.

Conclusion:

This savory panko-crusted salmon is a quick and easy recipe that's perfect for a weeknight meal. The salmon is coated in a flavorful mixture of panko breadcrumbs, Parmesan cheese, and herbs, then pan-fried until crispy. The result is a delicious and satisfying dish that's sure to please everyone at the table. So next time you're looking for a quick and easy salmon recipe, give this one a try – you won't be disappointed!
