5 potatoes, medium, peeled and sliced
4 onions, medium, peeled and sliced
2 tablespoons butter
4 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1 teaspoon dried thyme
3 tablespoons parsley, chopped
1/2 cup whipping cream
1/4 teaspoon paprika

Steps:

  • Preheat oven to 350°.
  • Sauté onions in butter until soft.
  • In a shallow baking dish layer sliced potatoes and onions, and sprinkle with garlic and seasonings between each layer.
  • Bake at 350° oven for 40 minutes.
  • Add whipping cream, sprinkle paprika over top.
  • Raise heat to 400° and bake 15-20 minutes longer, or until potatoes are soft.
  • *For a tasty variation try adding 1/2 cup peas, 1/2 cup ham and 1/2 cup grated Swiss cheese-- enjoy.

2 (2 ounce) envelopes Lipton Onion Soup Mix
2 -4 tablespoons extra virgin olive oil
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Scrub potatoes, do not peel.
  • Cut into bite-sized cubes.
  • Rinse in cold water and place in gallon size zip-lock bag.
  • Add olive oil, soup mix, and cheese.
  • Close bag and seal.
  • Mix well until potatoes are evenly coated.
  • Remove from bag and place in roasting pan and spread out evenly.
  • Bake 1 hour or until potatoes are tender.

4-5 large potatoes
1/2 onion; diced
3 Tbsp butter
3 Tbsp all-purpose flour
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/4 tsp garlic powder
2 c milk
1 1/2 c shredded sharp cheddar cheese

Steps:

  • 1. Preheat oven to 350.
  • 2. Peel potatoes.
  • 3. Cut in half lengthwise and slice potatoes.
  • 4. Butter baking dish/pan and layer in potatoes. Sprinkle in half of the diced onion.
  • 5. Melt butter in saucepan, sprinkle in the flour and cook on medium heat until bubbly.
  • 6. Sprinkle in salt, pepper, cayenne and garlic powder. Add milk.
  • 7. Stir until thickened and close to boil.
  • 8. Take off heat and add cheese.
  • 9. Stir until cheese is smooth and melted.
  • 10. Pour half the cheese sauce over first layer of potatoes.
  • 11. Add the remaining potatoes and diced onions to dish.
  • 12. Pour the remaining sauce over the top... spread out over all potato and onion mixture. Sprinkle with a bit of cayenne.
  • 13. Cover with foil and bake 1.5 hours.
  • 14. Pull off foil for last 30 minutes to brown. Let set on counter 5-10 minutes. Serve and enjoy :)

1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.

2 tablespoons butter (can use more)
3 medium onions, thinly slices
8 large eggs
3/4 cup whipping cream
1 1/4 cups cooked potatoes (diced into about 1/2-inch cubes)
1/2 cup crumbled blue cheese (can use lass)
1 tablespoon fresh thyme
salt and pepper

Steps:

  • Heat the oil with butter in a large frypan over medium-low heat.
  • Add in the onion slices; saute for about 10-15 minutes or until lightly browned and caramalized, then season with salt and pepper (leave in the skillet).
  • Sprinkle the cooked potato cubes over the onions and sprinkle with black pepper.
  • In a bowl whisk the eggs and whipping cream together with salt and pepper; pour over the onions and potatoes.
