STARR'S SAVORY MEATBALLS
This is my version of meatballs based on experimentation from several different recipes, including my mother's. I like to use these in spaghetti sauce, of course, but they're also delicious in my meatball subs. You can double or triple the recipe - sky's the limit! - and freeze.

- Preheat an oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
- Mix together the ground beef, onion, bread crumbs, Parmesan cheese, eggs, garlic, oregano, basil, thyme, Worcestershire sauce, salt, and pepper in a large bowl until just combined. Divide the mixture into 4 equal portions, then roll each of those portions into 4 meatballs. Arrange the meatballs on the prepared baking sheet.
- Bake in the preheated oven until no longer pink in the center, 15 to 20 minutes.

I'm not one to usually do turkey in my meatballs, but I saw this recipe in the recent issue of Cooking Light and decided to try since they are lower in fat. These can be used in spaghetti, substitute for beef in Stroganoff, or serve as as appetizer with warmed marinara dip, as the magazine suggests. Ricotta helps keep the lean ground turkey breast moist. Prepare them in advance, if you like, and store in the freezer for up to three months.

- Preheat oven to 375 degrees.
- Combine ground turkey breast with the other ingredients in a bowl and then shape mixture into about 18 meatballs.
- Heat a large nonstick skillet over medium-high heat.
- Coat pan with cooking spray.

- Remove from skillet; transfer to a broiler pan coated with cooking spray, and bake for 15 minutes or until done.

- Wash your hands.
- Form your ground beef into a tube on a large cutting board. Cut a slice down the middle of the tube forming a pocket along it's length.
- Remove the Italian Sausage (optional) from casing and place it into the pocket, then sprinkle all other ingredients over it (except the Spaghetti Sauce).
- Knead your ground beef tube with your hands until all ingredients are mixed thoroughly.
- Form your meatballs rolling them with the palms of your hands.
- If you are making meatloaf instead of meatballs, form your meatloaf tightly and bake it on a broiler pan (so the grease will drain through the holes) at 350 degrees for 30-45 minutes. During the last 10 minutes of cooking, pour your favorite Spaghetti Sauce over your meatloaf. When the meatloaf is done, it is ready to serve.
- Place your meatballs on tin foil in a large roasting pan. Roast at 350 degrees for about 35 minutes. This recipe makes about 50 meatballs. You may need to use 2 roasting pans depending on your pan size. Remove from oven when done.
- Pour your sauce (I always use Paul Newman's Sockarooni Sauce) into a crockpot until it is about 1/2 full. Add your meatballs and cover with a bit more sauce. Freeze any extra meatballs or set them aside in your fridge for a second serving later.
- Set your crockpot on high. Your meatballs will be ready to serve in about 1 hour.
- Try to keep the crowd back once word spreads about the juicy Italian flavor. Whatver else is happening at your party, a line will always be formed in front of your meatballs.

- In a large bowl mix the ground beef, onion, Salt TO TASTE, pepper, nutmeg and eggs. Shape into 2 inch balls and roll in the flour. Brown on all sides in the butter of a skillet.
- Add 11/2 cups of the bouillon and the bay leaf. Bring to a boil, cover and simmer for 30 minutes. Mix 1/4 cup flour with the remaining 1/2 cup bouillon, stirring until smooth.
- Stir into the mixture and stirring gently until thick. Remove the bay leaf and serve hot.

- 1. Preheat oven to 350 degrees. Mix beef, onion, basil leaves, soy sauce, vinegar, beaten egg, salt & pepper in medium size mixing bowl. Form meatballs with 1 tbsp size scoops and place on lightly oiled sheeetpan. Bake about 20 minutes. Spoon meatballs into serving bowl and allow to sit for 10 minutes before serving.
- 2. Plum Sauce: Place preserves, soy sauce, hot sauce, rice vinegar, and brown sugar into small saucepan over medium-low heat. Stir the contents often to help the brown sugar to dissolve and the preservatives to liquify. Allow sauce to go just to a soft boil, lower heat, and continue heating for about 10 minutes so it reduces slightly. Remove from heat and allow to cool at least 10 minutes.
- 3. When sauce has slightly cooled, pour 1/2 of the sauce over the meatballs and gently mix well. Add more sauce if needed or reserve for future use.
PENNE WITH SAVORY TURKEY MEATBALLS
Steps:
- 1) Heat 2 tbsp. butter in large skillet over medium-high heat and begin to saute mushrooms. 2) Meanwhile, combine the turkey, parmesan, 1 1/2 cup bread crumbs, grated onion, basil, garlic, pine nuts, salt and pepper in a large bowl and mix well. Mix in eggs. 3) Form the turkey mixture into 20-22 2-inch round balls and lightly roll each in the remaining bread crumbs. 4) Remove mushrooms from skillet and add olive oil. Cook meatballs in two small batches until brown on all sides (about 5 minutes per batch). Add additional oil if neccessary. Remove the meatballs from the skillet and keep warm. 5) Add wine to the skillet and scrape all the browned bits from the bottom. Add the cooked pasta, the mushrooms and the meatballs back into the skillet, reduce the heat and simmer for 3-5 more minutes to warm thoroughly. Serve with grated parmesan.
SWEET AND SAVORY MEATBALLS RECIPE
