SLOW-SIMMERED KIDNEY BEANS

Slow-Simmered Kidney Beans image

My husband always puts us down for a side dish when we're invited to a potluck. Canned beans cut down on prep time, yet you get plenty of zip from bacon, apple, red pepper and onion. I like simmering this mixture in the slow cooker because it blends the flavors and I don't have to stand over the stove. -Sheila Vail, Long Beach, California

SAVORY BEANS

This dish is from Camp Fire Girls Day Camp. It was so tasty, my mother continued making it through the years as a way to get me to eat veggies. My family has enjoyed it also. As the kids get older, you can spice it up a bit with onion, garlic, tomatoes, etc. Great for those days when you can't decide what to cook. Just add cornbread and you've got the whole meal.

Tips:

  • For the best results, use dried kidney beans that have been soaked overnight. This will help to reduce the cooking time and ensure that the beans are fully cooked.
  • If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 2-3 minutes and then letting them sit for 1 hour.
  • Be sure to rinse the beans thoroughly before cooking them. This will help to remove any dirt or debris.
  • To prevent the beans from becoming mushy, don't overcook them. Cook them until they are tender but still slightly firm.
  • Add salt to the beans only after they are cooked. Adding salt too early can toughen the beans.
  • If you are using canned kidney beans, be sure to rinse them thoroughly before using them.

Conclusion:

Kidney beans are a versatile and affordable ingredient that can be used in a variety of dishes. They are a good source of protein, fiber, and iron. With a little planning, you can easily create delicious and healthy meals using kidney beans. So next time you're looking for a new and exciting recipe, give kidney beans a try!
