2 cup rolled oats
1 cup shredded Parmesan cheese (4 ounces)
2 cup milk

Steps:

  • Preheat oven to 350°F. Grease a 2-quart square baking dish; set aside.
  • In a large skillet crisp-cook bacon according to package directions. Transfer bacon to paper towels, reserving drippings in skillet. Drain bacon well. Crumble bacon into large pieces and set aside. Cook sweet peppers in the bacon drippings over medium heat about 5 minutes or until tender.
  • In a large bowl combine cooked peppers, oats, bacon, and 1/2 cup of the Parmesan cheese. In a medium bowl whisk together milk and egg. Transfer oat mixture to the prepared baking dish. Pour egg mixture over oat mixture. Sprinkle the remaining 1/2 cup Parmesan cheese on top.
  • Bake for 30 to 35 minutes or until top is golden brown and mixture in set in center. Remove from oven. Let stand for 5 minutes before serving.

1/2 cup vegetable oil
3/4 cup white sugar
2 large eggs
3 cups quick-cooking oats (NOT instant)
2 teaspoons baking powder (less at altitude)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1 apple, peeled cored and chopped
1 cup raisins (optional)
1 cup coconut
1 cup dried cranberries (can also use other dried fruits, cherries, blueberries, etc.)

Steps:

  • Mix oil, sugar, and eggs, beat until yellow and glossy.
  • Add remaining ingredients except fruit. Beat until well-mixed.

70 grams (1/2 cup plus 1 tablespoon) whole wheat pastry flour
10 grams (2 1/4 teaspoons) baking powder
4 1/2 grams (scant 3/4 teaspoon) salt
1 gram (1/4 teaspoon) freshly ground pepper
150 grams (1/2 cup plus 1 tablespoon) milk
110 grams (2 extra large) egg
1/2 cup fresh herbs, such as parsley leaves, sage, marjoram, thyme, dill, chopped (1/3 cup chopped)
50 grams (3 tablespoons) grated onion
4 tablespoons extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees.
  • Place the oats in the bowl of a stand mixer or into the bowl of a food processor fitted with the steel blade. Sift together the flour, baking powder, salt, and ground pepper and add to the oats.
