CELERY HERB STUFFING AND SAVORY CHICKEN

Celery Herb Stuffing and Savory Chicken image

I taught my children this recipe by singing along to Scarborough Fair by Simon and Garfunkel: Parsley, Sage, Rosemary and Thyme, great herb stuffing seasonings. If you can get savory from the Atlantic provinces to green your chicken; it would be the best. My father was a Newfoundlander and swore by their savory.

SAVORY HERB CHICKEN

Categories     Chicken

Number Of Ingredients 10

3 boneless chicken breast or bone-in chicken breast with skin removed
1/2 c italian bread crumbs
1/2 c parmesan cheese
2 tsp parsley flakes
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp marjoram, dried
salt/pepper to taste
1 Tbsp butter, cut into pieces (it's best if it's cold)
2 -3 Tbsp dijon mustard

Steps:

  • 1. Preheat oven to 350 degrees. Spray glass baking dish with cooking spray. In small mixing bowl, mix bread crumbs, Parmesean cheese & herbs. In another small bowl, place mustard. Coat chicken with mustard, then coat thoroughly with breadcrumb mixture and place in baking dish. Put butter pieces on top of chicken. Bake for approximately 45 minutes to 1 hour or until chicken is tender. NOTE: Don't let chicken touch in baking dish.

Tips:

  • Use fresh herbs: Fresh herbs provide the best flavor, so use them whenever possible. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount called for in the recipe.
  • Don't overcrowd the pan: When searing the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will result in steamed chicken rather than seared chicken.
  • Cook the chicken over medium heat: Cook the chicken over medium heat so that it has time to cook through without burning. If you cook the chicken over high heat, it will brown too quickly on the outside and be undercooked on the inside.
  • Use a meat thermometer: To ensure that the chicken is cooked through, use a meat thermometer. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: After cooking the chicken, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the chicken, resulting in juicier, more flavorful chicken.

Conclusion:

This savory herb chicken is a delicious and easy-to-make dish that is perfect for any occasion. The combination of fresh herbs, garlic, and lemon zest gives the chicken a bright, flavorful taste that is sure to please everyone at the table. So next time you're looking for a simple but delicious chicken recipe, give this savory herb chicken a try!
