Time 30m

Yield 5

Number Of Ingredients 4

4 cups frozen potatoes O'Brien with onions and peppers (from 24-oz bag)
1/2 cup ranch dressing
1 cup shredded American-Cheddar cheese blend (4 oz)
2 tablespoons grated Parmesan cheese

Steps:

  • Heat gas or charcoal grill. Spray 1 (18x18-inch) sheet of heavy-duty foil with cooking spray. Place potatoes on center of foil. Drizzle with dressing; mix gently. Sprinkle with cheese blend.
  • Bring up 2 sides of foil over potatoes so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packet on grill over medium heat. Cover grill; cook 20 to 25 minutes, rotating packet occasionally, until potatoes are tender. Place packet on serving platter. Cut large X across top of packet; carefully fold back foil. Sprinkle with Parmesan cheese.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Bliss hold their shape well when grilled, while russets may fall apart.
  • Cut the potatoes evenly: This will help them cook evenly. For smaller potatoes, cut them in half or quarters, while larger potatoes can be cut into 1-inch cubes.
  • Parboil the potatoes: This will help them cook faster and more evenly on the grill. Bring a large pot of salted water to a boil, add the potatoes, and cook for 5-7 minutes, or until they are just tender. Drain the potatoes and let them cool slightly.
  • Toss the potatoes with oil and seasonings: This will help them brown and flavor nicely on the grill. Use your favorite oil (olive oil, avocado oil, etc.) and seasonings (salt, pepper, garlic powder, paprika, etc.).
  • Grill the potatoes over medium heat: This will help them cook through without burning. Cook the potatoes for 10-15 minutes per side, or until they are tender and slightly charred.
  • Serve the potatoes immediately: They are best enjoyed hot off the grill, but they can also be served at room temperature or cold. Serve them as a side dish, appetizer, or even as part of a main course.

Conclusion:

Grilled potatoes are a delicious and easy side dish that can be enjoyed all summer long. They are perfect for picnics, potlucks, or backyard barbecues. With just a few simple ingredients and a little bit of time, you can have a delicious and flavorful dish that the whole family will love. So fire up your grill and give this recipe a try!
