6 tablespoons canola oil
1 pound haricot verts, cleaned and blanched
Kosher salt and fresh cracked pepper
2 cups sliced button and oyster mushrooms
1 shallot, sliced
2 cloves garlic, sliced
1 teaspoon chopped fresh rosemary
1 teaspoon chili flakes
Splash sherry vinegar
1 tablespoon thinly sliced fresh mint

Steps:

  • In a large saute pan, heat 3 tablespoons of the oil over medium-high heat. Add the haricot verts and season with salt and pepper. When they begin to brown, about 5 minutes, remove from the pan and add the remaining 3 tablespoons oil with the mushrooms.
