Yield Makes about 1 1/4 cups

Number Of Ingredients 8

1/4 cup firmly packed light brown sugar
1 tablespoon cornstarch
1 cup dry white wine
1/2 cup chicken broth
1 teaspoon balsamic vinegar
1/2 cup dried cranberries (available at specialty foods shops)
1/8 teaspoon dried tarragon, crumbled
2 teaspoons minced fresh parsley leaves plus sprigs for garnish

Steps:

  • In a small saucepan whisk together the brown sugar and the cornstarch and add the wine and the broth, whisking until the mixture is smooth. Add the vinegar, the cranberries, the tarragon, and salt to taste and simmer the sauce, stirring occasionally, for 15 minutes. Stir in the minced parsley and simmer the sauce for 1 minutes more. Serve the sauce hot, garnished with the parsley sprigs, with pork chops, ham or poultry.

Tips:

  • Use fresh cranberries. Fresh cranberries are more flavorful and have a better texture than dried cranberries.
  • Don't overcook the cranberries. Overcooked cranberries will be mushy and lose their flavor.
  • Add a little bit of sugar or honey to the sauce. This will help to balance out the tartness of the cranberries.
  • Add some spices to the sauce. Spices such as cinnamon, nutmeg, and cloves will add a warm and festive flavor to the sauce.
  • Serve the sauce warm or cold. Savory cranberry sauce can be served warm or cold, depending on your preference.

Conclusion:

Savory cranberry sauce is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for Thanksgiving dinner, but it can also be enjoyed year-round. With its sweet and tart flavor, savory cranberry sauce is sure to please everyone at your table.
