Time 10m

Yield 16 triangles, 4 serving(s)

Number Of Ingredients 10

10 cilantro leaves, washed
1 serrano pepper
3 garlic cloves
1 cup Hellmann's mayonnaise
1/2 teaspoon sugar
1/4-1/2 teaspoon salt, depending on taste
1/4 teaspoon fresh ground black pepper
8 slices white bread
1/4 English cucumber, thinly sliced
3/4 cup finely shredded colby cheese or 3/4 cup sharp cheddar cheese

Steps:

  • Blend all ingredients for the spread in a food processor until smooth. Should be slightly thick. You might need to add a few tablespoons of water to ease the process. The spread should have a spicy yet slightly sweet taste.
  • Spread some of the mixture on one slice of bread. Top with cucumber slices and some cheese. Spread another slice and place on top. Cut off the crusts and cut the sandwiches diagonally so you get four triangles.
  • Repeat with rest of bread.
  • You can assemble, pack in an airtight container, and refrigerate up to 2 hours. They taste best at room temperature.
  • I keep the crusts and my daughter and I eat them as snacks.

Tips:

  • Choose the right cucumbers: For the best results, use English or hothouse cucumbers. They have thin skins and few seeds, making them ideal for sandwiches.
  • Peel the cucumbers thinly: This will help to prevent the sandwiches from becoming watery.
  • Use a sharp knife to slice the cucumbers: This will help to create clean, even slices.
  • Chill the cucumbers before assembling the sandwiches: This will help to keep them crisp and refreshing.
  • Use a variety of fillings: There are endless possibilities when it comes to fillings for cucumber sandwiches. Some popular options include cream cheese, mayonnaise, dill, and chives. You can also add other ingredients, such as bacon, ham, chicken, or salmon.
  • Serve the sandwiches immediately: Cucumber sandwiches are best when served fresh. If you need to make them ahead of time, store them in the refrigerator for up to 2 hours.
