PERFECT CORNBREAD STICKS
This is a melt in your mouth recipe. I have 3 molds for corn sticks, two are cast iron and one is glass. I use the cast iron. I usually do this recipe in the Winter, when the wood cook stove is fired up, and heat the mold on top of the stove before pouring the batter into the forms. This is the perfect accompaniment to my black bean soup.

Tips:
- For the best flavor, use fresh corn on the cob. If using frozen corn, thaw it completely before cooking.
- To ensure even cooking, select corn cobs that are all about the same size.
- If you are using wooden skewers, soak them in water for at least 30 minutes before using to prevent them from burning.
- Brush the corn cobs with melted butter or oil before grilling to help them brown and prevent them from sticking to the grill.
- Season the corn cobs with salt, pepper, and any other desired spices before grilling.
- Grill the corn cobs over medium heat, turning them frequently, until they are evenly browned and tender.
- To test if the corn is done, insert a toothpick or skewer into the center of the cob. If it comes out clean, the corn is done.
- Serve the corn cobs immediately with your favorite toppings, such as butter, salt, pepper, grated Parmesan cheese, or crumbled cotija cheese.
