Categories     Side Dish     Vegetables     Corn

Time 1h

Yield 6

Number Of Ingredients 8

1 tablespoon butter, or as needed, divided
2 cups corn
1 ½ cups heavy whipping cream
1 ¼ teaspoons salt
1 pinch cayenne pepper
½ cup cold milk
3 egg yolks
2 eggs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter six 6-ounce glass or ceramic ramekins. Set ramekins into a 2-inch deep baking dish.
  • Place corn into a large saucepan and stir in cream, salt, and cayenne pepper. Bring to a simmer and remove from heat; stir in milk.
  • Transfer corn mixture to a blender and pulse several times to get the mixture moving. Blend on high speed until smooth and creamy.
  • Whisk egg yolks with eggs until smooth in a mixing bowl. Slowly whisk about 1/4 cup hot corn mixture into eggs until the corn mixture is incorporated. Repeat several times more until all the corn mixture is combined with eggs.
  • Divide corn mixture equally into the 6 ramekins. Pour hot tap water into the baking dish to come about halfway up the sides of the ramekins.
  • Bake in the preheated oven until custards are just set, 30 to 35 minutes. Let custards cool for about 10 minutes before serving in ramekins or unmolding onto serving plates. To unmold, insert a knife between the custard and the ramekin, go around the edge with knife to loosen, and turn over onto a plate to unmold.

Categories     dinner, easy, appetizer, side dish

Time 45m

Yield 4 servings

Number Of Ingredients 8

2 cups cream, half-and-half or milk
1 sprig thyme, optional
1 clove garlic, optional
3 eggs plus 2 yolks
Pinch cayenne
1/2 teaspoon salt
1/2 cup grated semihard cheese, like Gruyère, Comté or Emmenthal
1/2 cup grated Parmesan

Steps:

  • Put cream in a small pot with thyme and garlic, if you're using them. Cook just until it begins to steam. Heat oven to 300 degrees and set a kettle of water to boil.
  • Put eggs, cayenne and salt in a medium bowl and whisk or beat until blended; stir in the cheese. Remove thyme and garlic from cream, then add cream gradually to egg mixture, whisking constantly. Pour mixture into a 1-quart dish or into 4 ramekins or custard cups.
  • Put dish or ramekins in a deep baking pan and pour boiling water in, to within about 1 inch of top of dish or ramekins. Bake until mixture is not quite set; it should jiggle a bit in middle. This will take about 30 minutes for ramekins and longer for baking dish; also, cream sets faster than milk. Serve warm, at room temperature, or cold within a few hours of baking.

Tips:

  • Choose fresh corn: The fresher the corn, the better the flavor of your custard will be. Look for plump, bright yellow kernels.
  • Use a sharp knife: When cutting the corn off the cob, use a sharp knife to ensure clean, even cuts.
  • Don't overcook the corn: Overcooked corn will become tough and lose its flavor. Cook it just until it is tender, about 3-4 minutes.
  • Use a good quality custard base: The custard base is what will give your corn custard its rich, creamy texture. Use a base made with fresh milk, eggs, and cream.
  • Season the custard to taste: Add salt, pepper, and other seasonings to taste. You can also add herbs, such as thyme or basil, for extra flavor.
  • Bake the custard in a water bath: This will help to prevent the custard from curdling and will also give it a more evenly cooked texture.
  • Serve the custard warm or cold: Corn custard can be served warm or cold. If you are serving it cold, allow it to cool completely before refrigerating.

Conclusion:

Savory corn custard is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover corn. With its creamy texture and sweet corn flavor, corn custard is sure to be a hit with everyone at your table.
