- Preheat oven to 350F.
- In a 2 quart oven safe (preferably) glass dish, add in the Rice.
- Using a measuring cup, Beef Consomme then top it up with water until the liquid measures 2 cups. Pour over the rice.
- Continue to add the Mushrooms, Water Chestnuts and dot top with pats of the Butter.
- Pop it in the oven covered with foil for 40 minutes. Check rice to see if the liquid has been absorbed.
- Uncover for the last 20 minutes to lightly brown. Carefully remove from oven and give it a stir.

- Heat oven to 180C/fan 160C/gas 4. Rinse and soak the rice for 10 mins. Heat a large, ovenproof saucepan. Add the oil, then the onion, garlic and ginger. Cook on a low heat until the onion is soft. Add the cloves, cinnamon and cardamom pods and cook for a further 2 mins on a low heat. Add the curry powder and cook for a further 2 mins, then stir.
- Drain the rice and add it to the saucepan. Stir so that the rice is coated in the oil and spices. Add the peas, sweetcorn and half the flaked almonds, if using. Pour over the stock and stir.
- Cover the pan with a lid or with a sheet of foil, then cook in the oven for 15-20 mins. Remove from the oven, scatter with the remaining almonds, if using, and serve.

BEEF CONSOME RICE
This is my adopted recipe.I made this today, Feb 16. I took the salt out of my revised ingredients, as the soups are salty enough, get low sodium soups if availabe. Baked in about 45 minutes. The original called for 1/4 pound butter, I changed that to 1/4 cup and that was plenty. Very good recipe, nice flavor.
