SAVORY CHICKEN DINNER

Savory Chicken Dinner image

Chicken and red potatoes baked in a savory sauce. This is a fast and easy dinner. I found this recipe in Taste Of Home Quick Cooking 2005. My future hubby and I really enjoyed this dish we thought it was so tasty. When I made this I made several minor changes to the recipe. I used 3 chicken quarters (bone-in) that I cut into pieces to make a thigh and leg, 8 small red potatoes and 2 small onions. Next time I make this I plan to bump up the onions as we enjoy baked onions. I may add some sliced carrots to the mix.

Tips:

  • Prep is Key: Before starting, measure and prep all ingredients. This ensures smooth, stress-free cooking.
  • Quality Ingredients Matter: Use fresh, high-quality ingredients for the best flavor and texture.
  • Don't Overcrowd the Pan: When roasting vegetables, ensure they have enough space to caramelize and crisp up.
  • High Heat for Chicken: Roast the chicken at a high temperature initially to create a crispy skin, then reduce heat to finish cooking through.
  • Make a Flavorful Marinade: If time allows, marinate the chicken in a flavorful mixture of herbs, spices, and oil to enhance its taste.
  • Roast Vegetables Separately: For optimal texture and flavor, roast the vegetables separately from the chicken, as they require different cooking times.
  • Use a Meat Thermometer: Ensure the chicken is cooked thoroughly by using a meat thermometer to check its internal temperature.
  • Let the Chicken Rest: After roasting, let the chicken rest for a few minutes before serving. This helps the juices redistribute, resulting in tender, juicy meat.

This savory chicken and roasted vegetables oven dinner is a delightful and effortless meal that showcases the beauty of simple, wholesome ingredients.
