2 cups brown rice
6 cups vegetable stock
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1/2 cup brown sugar
1 tablespoon minced fresh ginger
1 cup pitted and chopped fresh dates

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the brown rice, vegetable stock, cinnamon, nutmeg, salt, pepper, brown sugar, ginger and dates to a metal baking pan and mix with your hands to make sure all of the ingredients are distributed evenly. Cover with aluminum foil and bake for 45 minutes to 1 hour. Remove the pan from the oven, transfer the rice to a serving bowl and serve.

1 tablespoon olive oil or 1 tablespoon vegetable oil
4 bone in skin on chicken thighs
salt and pepper
1 large onion, cut into 6-8 sections
2 celery ribs, cut into 1-2 inch pieces
2 carrots, cut into 1-2 inch pieces
1 bay leaf
1 cup brown rice

Steps:

  • Salt and pepper chicken to taste.
  • In a big dutch oven that has a lid, heat oil then place the chicken thighs skin side down in the hot oil. Brown, then turn pieces over and brown the other side. Approx 5-6 min per side.
  • Remove all but 1-2 TBS of the fat from bottom of pot. Add the onion and celery pieces. Put lid on pot and cook on low for 20 minutes.
  • Add the carrots and the bay leaf, 1 3/4 cup water and rice. Bring to boil, then reduce heat to low. Put lid back on and cook for 40 to 45 minutes until the rice has absorbed the liquid.
  • Turn off heat, let pot sit covered for 10 minutres.
  • Serve.

2 tablespoons butter or 2 tablespoons margarine
1/2 yellow onion, chopped
1/2 green bell peppers or 1/2 red bell pepper, chopped
1 celery rib, sliced
1 cup long grain brown rice
2 cups chicken broth or 2 cups vegetable broth
1/4 teaspoon dried thyme, crumbled
1/4 teaspoon dried marjoram, crumbled
1/4 teaspoon dry mustard
1/4 teaspoon salt (or to taste)
fresh ground black pepper
1/4 cup minced fresh parsley

Steps:

  • In a saucepan over medium heat, melt butter.
  • Add in vegetables; stir/saute until slightly soft, about 6 minutes.
  • Stir in rice; add broth and seasonings, except parsley; bring to a boil.
  • Decrease heat to low; cook, covered, until liquid is absorbed, about 45-50 minutes.

1 can(s) campbell's beef consomme soup
1 can(s) campbells french onion soup
1 1/3 c uncooked long grain white rice(not instant rice)
1 stick real butter
1 can(s) soup can of water

Steps:

  • 1. In a 4 quart casserole dish, place one stick of unmelted butter and place in oven. Preheat oven to 400 degrees, allowing butter to melt. I do not use any no stick spray, the butter is enough to keep from sticking.
  • 2. Once butter is melted, be careful not to let it burn. Remove dish from oven and pour into dish in this order: Rice, Soups, and 1 Soup Can of Hot Water. DO NOT STIR!!
  • 3. Place in preheated oven for about 40 minutes, or until all moisture is absorbed and onions will pool in the center of dish. Remove from oven and allow to rest for 10 minutes. Stir and ENJOY!!
