Categories     side-dish

Time 25m

Yield 6 servings

Number Of Ingredients 6

3 pounds baby Yukon gold potatoes
Salt
Freshly ground black pepper
3 cups chicken stock
3 tablespoons butter
2 to 3 tablespoons freshly chopped parsley leaves

Steps:

  • Place the potatoes in a deep skillet and add salt and pepper, to taste. Cover potatoes halfway with chicken stock, about 3 cups, add the butter and cover skillet with a lid. Cook the potatoes in the stock until almost tender, about 5 to 8 minutes, depending upon the size of the potatoes. Remove the lid and allow the stock to evaporate, about another 5 minutes. Once the stock has evaporated pop each potato using a ladle or large spoon, creating a small crack in each, but do not smash. Allow the potatoes to brown on each side, another 5 minutes, and re-season with salt and pepper, if necessary or desired. Remove the browned potatoes from the skillet and place onto a serving platter, garnished with the parsley.

Yield Makes 4 servings

Number Of Ingredients 4

2 pounds medium-size unpeeled Yukon Gold potatoes, each cut into wedges
6 tablespoons olive oil, divided
5 large garlic cloves, peeled, halved
1 teaspoon chopped fresh thyme

Steps:

  • Steam potato wedges until very tender, about 15 minutes.
  • Meanwhile, heat 5 tablespoons oil in large skillet over low heat. Add garlic; sauté until golden, about 6 minutes.
  • Add potatoes and thyme to skillet. Mash coarsely. Season with salt and pepper. Transfer to bowl, drizzle with remaining 1 tablespoon oil, and serve.

Tips:

  • Choosing the Right Potatoes: Yukon Gold potatoes are an excellent choice for sautéing because they hold their shape well and have a creamy texture. Other good options include baby potatoes, red potatoes, and fingerling potatoes.
  • Pre-Cook the Potatoes: To ensure that the potatoes are cooked through and evenly browned, consider pre-cooking them by boiling or microwaving them until they are tender but still slightly firm. This will reduce the cooking time in the sauté pan.
  • Use High Heat: Sautéing requires high heat to create a flavorful crust on the potatoes. Make sure your pan is hot before adding the potatoes and oil.
  • Don't Crowd the Pan: To prevent the potatoes from steaming instead of sautéing, avoid overcrowding the pan. Cook the potatoes in batches if necessary.
  • Season Generously: Don't be afraid to season the potatoes liberally with salt, pepper, and other spices. This will enhance their flavor and make them more enjoyable.
  • Add Aromatics for Extra Flavor: To elevate the taste of your sautéed potatoes, consider adding aromatic ingredients such as garlic, onions, or shallots. These ingredients will infuse their flavor into the potatoes and create a more complex dish.
  • Garnish with Fresh Herbs: Once the potatoes are cooked, garnish them with fresh herbs such as parsley, chives, or cilantro. This will add a pop of color and freshness to the dish.

Conclusion:

Sautéed Yukon Gold potatoes are a simple yet satisfying side dish that can be enjoyed for breakfast, lunch, or dinner. With their crispy exterior and tender interior, these potatoes are a versatile addition to any meal. Whether you prefer them plain or seasoned with your favorite herbs and spices, sautéed Yukon Gold potatoes are sure to be a hit. So next time you're looking for a quick and easy side dish, give this recipe a try. You won't be disappointed!
