SAUTEED SPINACH WITH TOASTED PINE NUTS

Sauteed Spinach with Toasted Pine Nuts image

Sautéed spinach gets unexpected earthiness and crunch from toasted pine nuts.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Number Of Ingredients 6

1/4 cup extra-virgin olive oil
4 garlic cloves, thinly sliced
2 pounds baby spinach
Coarse salt and freshly ground pepper
1/2 lemon
1/4 cup pine nuts, toasted

Steps:

  • Heat 1 tablespoon oil and 1 garlic clove in a 12-inch straight-sided skillet over medium-high heat, until garlic is golden, about 3 minutes. Add a quarter of the spinach, and cook just until it wilts, about 2 minutes. Transfer to a colander; drain. Repeat with remaining oil, garlic, and spinach.
  • Transfer spinach to a bowl. Season with salt and pepper. Squeeze lemon over spinach, and top with pine nuts.

Tips:

  • Choose fresh spinach: Look for spinach with deep green, unwilted leaves. Avoid any leaves that are yellowed or wilted.
  • Wash the spinach thoroughly: Rinse the spinach well under cold water to remove any dirt or debris.
  • Use a large skillet: This will help the spinach cook evenly and prevent it from becoming crowded.
  • Cook the spinach over medium-high heat: This will help it cook quickly and retain its vibrant green color.
  • Don't overcook the spinach: Spinach cooks very quickly, so be careful not to overcook it. Otherwise, it will become limp and mushy.
  • Season the spinach to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a drizzle of balsamic vinegar.
  • Serve the spinach immediately: Sautéed spinach is best served fresh. It can be served as a side dish or used as a topping for other dishes, such as pasta, pizza, or eggs.

Conclusion:

Sautéed spinach with garlic and pine nuts is a simple but delicious dish that can be prepared in just a few minutes. It's packed with flavor and nutrients, and it's a great way to add more vegetables to your diet. Whether you're serving it as a side dish or using it as a topping, sautéed spinach is sure to be a hit!
