1 cup reduced-sodium beef broth
1 beef top sirloin steak (1-1/4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1/2 pound sliced fresh mushrooms
1 garlic clove, minced
1/2 teaspoon dried rosemary, crushed
1/8 teaspoon salt
1/4 cup sherry or additional reduced-sodium beef broth
1 tablespoon butter

Steps:

  • In a large skillet over medium-high heat, cook and stir flour for 4-5 minutes or until light tan in color. Immediately transfer to a small bowl; whisk in broth until smooth. Set aside., Sprinkle beef with salt and pepper. In the same skillet, cook beef in oil over medium heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 3 lb sirloin steak (cut into 1-inch pieces)
1/4 cup Teriyaki or Soy sauce
1/4 cup packed light brown sugar
3 Tbsp olive oil (plus additional for cooking)
2 Tbsp chopped Italian parsley or cilantro
3 clove garlic (minced)
1 tsp red pepper flakes
2 tsp steak seasoning (divided [i.e. Mesquite/Montreal/Chicago/ Kansas City your preference])
1 red bell pepper (seeded and sliced)
1 green bell pepper (seeded and sliced)
1 large sweet onion (cut into thin wedges)
Black pepper to taste

Steps:

  • Rinse, pat dry and cut the sirloin steaks into 1-inch pieces.
  • Whisk together the teriyaki sauce, brown sugar, olive oil, chopped parsley, 3 clove minced garlic and red pepper flakes. Place into a plastic storage bag and refrigerate for several hours or overnight.
  • To prepare, remove the sirloin tips from the marinade. Discard the marinade.
  • Heat a few drizzles of olive oil in a large cast iron or heavy skillet over medium-high heat. Add the sirloin tips. Cook for 5-7 minutes until browned and to your preferred doneness. Season with 1 tsp of steak seasoning. Remove from the pan to a platter to rest.
  • Add the sliced bell peppers and onion wedges to the pan. Season with 1 tsp steak seasoning and black pepper to your taste. Add additional olive oil if needed. Cook for 5 minutes scraping the brown bits from the bottom of the skillet. Cook until browned and crisp tender.
  • Add the sirloin beef tips back to the pan. Stir until heated through then serve.

1/2 lb sliced mushrooms (I use crimini but white work as well)
1 medium onion, sliced into wedges
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic salt

Steps:

  • Melt the butter and olive oil together in a frying pan and add the mushrooms and onions; let them cook slowly, over medium heat, until the mushrooms are getting a little brown and the onions are nice and soft, about 20 minutes.
  • While there's still some moisture left from the mushrooms, add the Worcestershire sauce and garlic salt.
  • The mixture will thicken and it's ready to serve.
  • Serve with grilled steak and use leftovers for omelets.
  • Makes 4 servings if served with steak.

1 lb fresh button mushroom, same-size, divided
2 tablespoons extra virgin olive oil
1 teaspoon fresh thyme, minced, divided
kosher salt
3 garlic cloves, minced
1/4 cup medium- dry sherry
1 tablespoon fresh flat leaf parsley, minced
1 tablespoon butter

Steps:

  • If mushrooms are greater than one inch in diameter, cut into quarters.
  • Heat 12 inch skillet over medium heat.
  • Add 1 T olive oil. When the oil is hot enough to sizzle a piece of mushroom, add half the mushrooms and half the thyme. Raise the heat to medium-high and saute, stirring only occasionally, until the mushrooms are golden brown. If you stir them too often or crowd them in the pan, you'll prevent the mushrooms from carmelizing.
  • Season with salt and pepper.
  • Transfer the mushrooms to a bowl, and repeat with the remaining mushrooms. Add the garlic, and saute 1 minute, stirring. Return the reserved mushroom, with any accumulated juices, to the pan.
  • Add the sherry and parsley, and boil until the liquid is reduced to a glaze, another minute or so.
  • Add the butter, and gently swirl the pan as the butter melts and emulsifies with the sauce. Taste and adjust the seasonings with salt and pepper.
