SHRIMP IN CHIPOTLE SAUCE
A sauce just spicy enough to make your mouth tingle enveloping tender shrimp- this is fairly quick to prepare if you use pre- peeled shrimp. This recipe includes Cola which adds flavor as well as a touch of sweetness. The sauce is good spooned over white rice. I would not suggest using diet cola for this recipe. Steps:
- In a bowl, stir together the garlic, lme juice, and sea salt and pepper to taste. Add the shrimp and toss until thoroughly coated. Let marinate while preparing the sauce, at least 5 minutes.
- In a heavy frying pan or cazuela over medium-high heat, heat the olive oil. Add the onion and saute until golden, about 3 minutes. Add the tomatoes and cook, stirring constantly, just until the color deepens, less than 1 minute. Using a slotted spoon, transfer the tomato mixture to a blender, allowing any excess oil to drip back into the pan. Reserve th oil in the pan. Add the chiles an dsauce, cola, and oregano to the blender. Process until you get a textured sauce.
- Remove the shrimp from the marinade and pat dry with paper towels. Return the pan with the reserved oil to medium-high heat and heat until the oil begins to shimmer. Add half of the shrimp and cook until opaque, about 2 minutes. Using the slotted spoon, transfer to a plate. Repeat with the remaining shrimp and add them to the plate.
- Return the still-hot pan to medium-high heat and add the sauce. Fry, stirring frequently, until the sauce thickens and the flavors deepen, about 5 minutes. Stir in the shrimp and cook for 2 minutes longer just to heat through. Divide the shrimp evenly among warmed individual plates. Spoon some of the remaining chipotle sauce over each serving and serve at once.

SAUTEED SHRIMP WITH ANCHO CHILES AND GARLIC
Steps:
- In a large skillet, heat the olive oil over medium-low heat. Cook the garlic slices until tender but not brown. Transfer with a slotted spoon to paper towels and reserve. Turn the heat under the pan to high. Quickly toss the shrimp with the salt and pepper in a bowl. When the oil is nearly smoking, add the shrimp. Saute, stirring and shaking the pan to prevent sticking, 3 to 4 minutes or just until the shrimp are still slightly undercooked. Remove from the heat. With a slotted spoon, transfer the shrimp to a platter, leaving as much liquid in the pan as possible. Return the pan to the burner and reduce the heat to medium. Add the garlic slices and anchos and saute, stirring frequently, until the oil begins to turn orange from the chiles. Stir in the fish stock or clam juice, along with the shrimp and any juice that has collected on the platter. Add the lime juice and parsley, bring to a boil and remove from the heat. Serve immediately over white rice.

Steps:
- Heat oil in a large skillet over medium heat. Add garlic, and cook until soft but not browned, 1 to 2 minutes. Add shrimp, parsley, oregano, and red-pepper flakes; cook, stirring frequently, until shrimp are bright pink and opaque, about 2 minutes.
- Raise heat to medium-high, and add wine. Continue cooking until most of the liquid has evaporated. Remove from heat; season with salt and pepper. Serve hot, with lemon wedges on the side.
Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your dish. Fresh shrimp are essential, and look for ones that are firm and have a slight briny smell.
- Don't overcook the shrimp. Shrimp cook quickly, so it's important to not overcook them or they will become tough and rubbery. Cook them for just a few minutes, or until they are opaque and pink.
- Use a good quality olive oil. Olive oil is a healthy and flavorful fat that will help to enhance the flavor of the shrimp. Look for an extra virgin olive oil that is cold-pressed and has a fruity flavor.
- Use fresh herbs. Fresh herbs, such as cilantro, parsley, and basil, will add a lot of flavor to your dish. Chop them finely and add them at the end of cooking.
- Serve immediately. Shrimp are best served immediately after they are cooked. This will help to preserve their flavor and texture.
Conclusion:
Sautéed shrimp with chipotle chiles is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. The shrimp are cooked in a flavorful sauce made with chipotle chiles, lime juice, and garlic. Serve the shrimp with rice, tortillas, or your favorite sides.
