QUICK SAUTEED SHRIMP IN TOMATO GARLIC SAUCE

Quick Sauteed Shrimp in Tomato Garlic Sauce image

Provided by Sunny Anderson

Time 25m

Yield 4 servings

Number Of Ingredients 9

2 tablespoons olive oil
3 scallions, finely chopped
3 cloves garlic, sliced into thin slivers
Salt and freshly ground black pepper
4 Roma tomatoes, seeded and chopped
1/4 cup clam juice
2 tablespoons fresh lemon juice
1/2 teaspoon sugar, optional
16 colossal shrimp, shelled and deveined with tail on (about 1 1/4 pounds)

Steps:

  • In a large saute pan over medium heat, add the olive oil, scallions, garlic, a nice pinch of salt and a few grinds of black pepper. Cook until the greens of the scallions are wilted and darkened with the oil and the garlic is tender and slightly golden, about 4 minutes. Add the tomatoes, season with salt and cook while stirring until the tomatoes are softened, about 2 minutes. Add the clam juice and lemon juice, bring to a light simmer and stir. Taste, and if the tomatoes and lemon juice are too tart, add sugar and stir.
  • Sprinkle the shrimp with salt and pepper and add to the pan. Cook on 1 side until the shrimp begins to turn opaque and curl slightly, 2 to 3 minutes. Then toss and cook until they just begin to turn pink on the other side, 1 to 2 more minutes. (Shrimp cooks fast and there's a thin line between done and overdone; the best rule is to remove the pan from the heat as they begin to reach the finish line. Continue tossing and the heat of the pan will continue to cook them until done.) Serve warm or chilled.

SAUTEED SHRIMP WITH MANGO SALSA

Sauteed Shrimp With Mango Salsa image

I recently saw this recipe for mango salsa made on an episode of The Barefoot Contessa. This particular show was featuring "healthy" recipes for a change, and this version of a mango salsa simmered on the stove top, then finished with fresh herbs sounded quite good. The original recipe had seared tuna steaks served over the salsa, but I chose to mix in some sauted shrimp as well. Also, on the show, Ina Garten uses fresh mint leaves, but I prefer to use a mix of fresh cilantro and basil, just to be different.

SAUTEED SHRIMP IN GARLIC SAUCE

Sauteed Shrimp in Garlic Sauce image

Chipotle chiles are smoke-dried jalapenos that add a distinct flavor and moderately spicy heat to this dish from Suzette Hagan of Indianapolis, Indiana.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Time 15m

Number Of Ingredients 8

1 1/2 pounds medium shrimp, peeled and deveined
Coarse salt and ground pepper
3 tablespoons olive oil
5 garlic cloves, coarsely chopped
1 to 2 tablespoons chopped chipotle in adobo (canned)
1/2 teaspoon paprika
2/3 cup dry white wine
1 tablespoon chopped fresh parsley

Steps:

  • Season shrimp with salt and pepper; set aside. In a large nonstick skillet, heat oil over medium-high heat. Add garlic and chipotle; cook until garlic just begins to color, about 1 minute.
  • Add shrimp; cook, tossing constantly, until opaque throughout, about 2 minutes. Add paprika, and stir to coat. With a slotted spoon, transfer shrimp to a serving dish.
  • Pour wine into pan; bring to a boil over high heat. Cook until reduced by half and slightly thickened, about 1 minute. Pour sauce over shrimp, and sprinkle with parsley.

Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw them completely before cooking.
  • Clean the shrimp properly: Rinse the shrimp under cold water and remove the shells and tails. To devein the shrimp, make a shallow cut along the back of the shrimp and remove the dark vein.
  • Use a large skillet: A large skillet will help to prevent the shrimp from overcrowding and becoming rubbery.
  • Don't overcrowd the skillet: Cook the shrimp in batches if necessary to avoid overcrowding.
  • Use a high heat: Shrimp cook quickly, so it's important to use a high heat to sear them and prevent them from becoming rubbery.
  • Don't overcook the shrimp: Shrimp are done cooking when they turn opaque and pink. Overcooking will make them tough and rubbery.
  • Season the shrimp: Season the shrimp with salt, pepper, and other spices to taste before cooking.
  • Use a variety of vegetables: You can use any type of vegetables you like in your sautéed shrimp. Some popular choices include broccoli, bell peppers, carrots, and onions.
