1 tablespoon whole cloves

1- 1 1/2 lb ham steak
1 bunch fresh asparagus
1 large can of sliced pinapple rings in its own juice. (will be grilling so don't want the kind in syrup)
2 Tbsp balsamic vinegar
2 Tbsp maple syrup (the real stuff really makes a difference here)
2 Tbsp dijon mustard
3 Tbsp olive oil
salt and pepper

Steps:

  • 1. Pre heat your indoor grill pan and coat with olive oil before preheating.(can use outdoor grill as well) Use Med high heat
  • 2. Pat dry Ham Steak with paper towel and place on grill for 7 to 8 minutes per side depending on thickness
  • 3. Place pineapple on grill with steak and turn same timing as ham steak. Preheat oven on broil
  • 4. The last 8 minutes of the ham cooking in a small saute pan place balsamic vinegar and cook on med high heat for several minutes to cook down. Add Maple syrup and dijon mustard and mix in mustard well cook another 3 min to thicken a bit
  • 5. Take ham and pineaple off grill put in serving dish and cover ham with glaze and let rest while asparagus is cooking
  • 6. bend one asparagus stalk until it breaks and cut other stalks to same length. Place on baking sheet and drizzle with olive oil salt and pepper. Place under broiler for 5 minutes and serve

1/4 cup brown sugar
2 tablespoons ground cinnamon
1 whole smoked ham, sliced
1 (12-ounce) can pineapple chunks
Lettuce, for garnish
Sauteed Sweet Potatoes and Corn, recipe follows
Caramelized Apples, recipe follows
1 sweet potato
2 tablespoons olive oil
2 tablespoons fresh rosemary leaves, minced
2 ears corn
1 green bell pepper
1 red bell pepper
4 red apples, sliced into wedges
2 tablespoons butter
1/4 cup brown sugar

Steps:

  • Combine the brown sugar and cinnamon in a small bowl. Sprinkle the sugar mixture over the ham slices to coat all of the pieces. Heat a large grill pan over medium-high heat. Drain the pineapple chunks from the juice in the can. Add the ham and the pineapple chunks to the hot pan, and cook for approximately 20 minutes, or until the slices are golden brown. Reserve the liquid in the pan for the Sauteed Sweet Potatoes and Corn.
  • Serve over lettuce with the Sauteed Sweet Potatoes, Corn, and Caramelized Apples.
  • Bring a medium-sized pot of water to a boil. Peel and cut the sweet potato into small chunks. Add the sweet potato to the boiling water, and boil until tender. Drain the sweet potato into a colander. In the same pot, heat the olive oil over medium heat. Return the sweet potato to the pot, and add the rosemary. Saute until the sweet potato has developed nicely browned crusts on the cut sides, and then remove it to a large serving bowl.
  • In another medium-sized pot, place 2 ears of corn in just enough water to cover, and bring to a boil. Continue boiling until kernels are soft and tender. Meanwhile, slice the green and red peppers into 1/4-inch strips. Add the peppers to the pan with the liquid from the sauteed ham, and cook over medium-high heat. Slice the corn off the cob, and add it to the pan with the peppers. Continue sauteing until vegetables are crisp yet tender. Add the corn and pepper mixture to the bowl with the sweet potato, and toss gently until combined.
  • In a large pot, add the apples and enough water to cover. Bring to a boil and cook until apples are tender. Drain in a colander. To the same pot, add the butter and brown sugar, and return the apples. Over low heat, stir with a wooden spoon until the apples absorb the sugar and the butter has melted.

1 (15 ounce) can pineapple rings
brown sugar
cinnamon

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice ham into thick slices.
  • Place the ham steak in a shallow ovenproof pan and place the pineapple slices on top. Pour the pineapple juice over all.
  • Place the ham steak in the oven and bake for 20 minutes (uncovered).

2 (1/2-inch thick) ham steaks
4 tablespoons butter
1 tablespoon whole-grain mustard
3 (8-ounce) cans pineapple chunks, reserving liquid
1/4 cup orange juice
1 tablespoon Dijon mustard
Salt and freshly ground black pepper

  • Remove rind from ham steaks and trim off all but 1/4-inch of outer fat. Cut ham into 4 serving pieces. In a large saute pan set over moderately high heat, melt 2 tablespoons of butter. Add ham steaks and saute for 3 minutes on each side, until steaks are lightly browned. Transfer ham steaks to plate. Blot the pineapple chunks as dry as possible.
