Tips

- **Choose fresh, tender green beans.** Look for beans that are bright green and have no blemishes. Avoid beans that are wilted or have brown spots. - **Trim the green beans.** Remove the ends of the beans and any tough strings. - **Blanch the green beans.** This will help to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process. - **Sauté the green beans.** Heat a large skillet over medium heat. Add the oil and garlic and cook until the garlic is fragrant, about 1 minute. Add the green beans and cook, stirring occasionally, until they are heated through and slightly browned, about 5 minutes. - **Add the tomatoes and seasonings.** Stir in the tomatoes, salt, pepper, and red pepper flakes. Cook for an additional 2-3 minutes, or until the tomatoes are softened. - **Garnish with parsley.** Serve the green beans immediately, garnished with chopped parsley.
