1 T. garlic, pressed
1 T. grated ginger
1/2 t. chili paste
Sauce: 2t. sugar, 2T. soy, 2T.bean sauce or hoisin, 2T. chinese rice wine.

Saute until sauce is reduced and glazes the beans. Top with a little sesame oil.

Tips:

  • Choose fresh green beans: Look for beans that are bright green and crisp. Avoid beans that are limp or have blemishes.
  • Trim the green beans: Remove the ends of the beans. You can also trim the beans into smaller pieces if desired.
  • Blanch the green beans (optional): Blanching the green beans will help them retain their color and crispness. To blanch the beans, bring a pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Use a well-seasoned wok or skillet: A well-seasoned wok or skillet will help prevent the beans from sticking. If you don't have a well-seasoned wok or skillet, you can season it by heating it over medium heat and adding a little oil. Swirl the oil around the pan until it coats the entire surface. Remove the pan from the heat and let it cool.
  • Use high heat: Sautéing the green beans over high heat will help them cook quickly and evenly. Make sure your wok or skillet is hot before adding the beans.
  • Stir the beans frequently: Stirring the beans frequently will help prevent them from burning.
  • Add sauce or seasonings: Once the beans are cooked, you can add sauce or seasonings to taste. Some popular options include soy sauce, oyster sauce, garlic, ginger, and sesame oil.

Conclusion:

Sautéed green beans are a quick and easy side dish that can be enjoyed with a variety of meals. By following the tips above, you can make sure that your green beans are cooked perfectly every time.
