450 g courgettes (1 lb)
25 g butter (1 oz)
15 ml vegetable oil (1 Tablespoon)
1/2 lemon, juice and zest of, grated
salt
pepper
15 ml fresh chives (1 Tablespoon)

Steps:

  • Wash, dry, and thinly slice courgettes.
  • Heat butter and oil together, add courgettes and saute uncovered for 6-8 minutes on medium heat.
  • Add lemon rind and juice and then salt and pepper to taste.
  • Transfer to a warmed serving dish, snip fresh washed (and shaken) chives over the courgettes and serve immediately.

3 medium zucchini (1 lb total), halved lengthwise and cut crosswise into 1/8-inch-thick slices
1/4 teaspoon salt

1/4 cup chopped fresh chives
1 1/2 oz finely grated Pecorino Romano or Parmigiano-Reggiano (3/4 cup)
10 large eggs, lightly beaten

Steps:

  • Preheat oven to 375°F.
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté zucchini with salt and pepper, stirring occasionally, until just tender, about 4 minutes.
  • Whisk chives, zucchini, and 1/2 cup cheese into eggs. Divide mixture among oiled muffin cups and bake in middle of oven until tops are puffed and set, about 14 minutes. Remove pan from oven and turn on broiler. Sprinkle frittatas with remaining 1/4 cup cheese and broil 3 to 4 inches from heat until cheese is melted and tops are golden, 1 to 2 minutes.

3-4 tbsp plain flour
splash olive oil
sprig fresh rosemary

Steps:

  • Slice the courgettes in a food processor, using the fine disc, and pat dry on a clean tea towel. Toss the slices in a plastic bag with the flour, well seasoned. Heat the olive oil in a large frying pan with the rosemary, discarding the herb when the oli is hot, and add 1⁄4 of the courgettes. Fry the courgettes in batches on medium high heat for 2-3 minutes until light golden. Drain on kitchen paper, serve hot.

3 medium potatoes
1/2 onion
2 stalks celery
1/4 teaspoon pepper
15 ounces sodium-free chicken broth
3 tablespoons cornstarch
12 ounces fat-free evaporated milk
1 cup non fat cheese
1 teaspoon chives

Steps:

  • COMBINE onions, celery, broth, pepper and peeled and diced potatoes into large saucepan.
  • BOIL then cover and SIMMER for 20 minutes.
  • In small bowl, combine 1/4 cup of milk and cornstarch until smooth.
  • COMBINE into above mixture.
  • ADD remaining milk and BOIL.
  • STIR constantly for about 3 minutes until thick.
  • REMOVE from heat and stir in cheese.
  • Allow mixture to cool slightly before putting it in a blender to make smooth.
  • If necessary, reheat via stovetop or microwave 2 minutes until hot.
  • TOP with chopped chives or allspice/nutmeg.
  • NOTE: Amount if pepper is personal taste.
  • NOTE: I mixed a tsp of a chilli recipe from the Golden Door Retreat into it (is fantastic for losing weight and tasty too; 300 grams of chilli peppers (all of it), 2 tbsp apple cider, 2 tsp tamari --- is HOT :).
  • ENJOY.
