SHEET-PAN ROASTED CHICKEN WITH PEARS AND ARUGULA
In this hearty sheet-pan meal, thick pear wedges and chicken thighs seasoned with earthy, warming spices are roasted until soft and tender. During the last five minutes, crunchy sunflower seeds are scattered on the pan to sizzle in the pan juices, gaining a salty flavor that balances out the sweetness of the pears. A final topping of arugula soaks up any lingering juices and turns this into a full-on meal. Using firm, not-quite-ripe pears prevents them from becoming mushy and falling apart during the cooking process. Swap baby spinach for the arugula and sherry vinegar for the lemon juice, depending on what you have on hand. Serve any leftovers on a bed of fresh arugula, dressed with lemon and olive oil.

Steps:
- Heat the oven to 450 degrees with a rack in the center.
- Pat the chicken dry and trim excess fat and skin. Sprinkle all over with 2 teaspoons salt, and season with pepper. In a small bowl, mix together the red-pepper flakes, cumin, coriander, ginger and oil. On a sheet pan, rub the chicken and pears all over with the mixture. Arrange chicken skin-side up and pears skin-side down. Cook until the chicken is cooked through (165 degrees at the thickest part) and the pears are tender, 25 to 30 minutes. During the last 5 minutes, add the sunflower seeds to the pan. If there's a lot of fat when finished cooking, tilt the pan and spoon it off until there's a light coating on the surface of the pan.
- Scatter the arugula on top, and squeeze the juice of 1/2 lemon over the pan. Season with salt and pepper to taste. Top with herbs, if using. Cut the remaining lemon half in quarters and serve.
BRAISED CHICKEN WITH APPLES AND SAGE
Steps:
- Pat chicken dry and sprinkle all over with salt and pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken well, starting with skin sides down and turning over once, 10 to 12 minutes total. Transfer chicken to a plate and pour off all but 1 tablespoon fat from skillet.
- Add butter, brown sugar, apples, and shallots to fat in skillet and cook over moderate heat, stirring occasionally, until apples are browned, about 5 minutes.
- Add broth, vinegar, and sage and deglaze skillet by boiling, stirring and scraping up any brown bits, 1 minute. Return chicken, skin sides up, to skillet along with any juices accumulated on plate. Reduce heat and simmer, loosely covered with foil, until chicken is cooked through and sauce is slightly reduced, 20 to 25 minutes.

Steps:
- Preheat a large skillet over medium-heat, for about 1 minute or until the surface of the pan is uniformly hot. While the pan heats pat the chicken dry, and season the skin-side with salt and pepper. Spread flour onto a plate and lightly dredge the chicken in the flour to coat. Shake off the excess flour. Add the oil to the pan. Lay the chicken skin side down into the pan and saute over high heat for 1 minute. Lower the heat to medium-high and cook the chicken until browned, about 3 minutes. Add 1 tablespoon butter to the pan. Turn the breasts over and cook for another 5 to 8 minutes, or until firm to the touch. Remove chicken from the pan to a plate and keep warm while you make the sauce.
- Add the white wine or the vermouth to the pan, and with a wooden spoon, scrape up the browned bits that have collected on the pan. (This is called deglazing the pan.) Cook the wine until syrupy over high heat, about 3 minutes. Add the chicken broth, the sage, and reduce the sauce by 1/4 or until thickened. Off the heat, whisk in 1 to 3 tablespoons butter and the mustard, to enrich, flavor, and thicken the sauce. Season the sauce to taste with salt and pepper. Pour the sauce onto a serving platter or divide among 4 plates, put chicken on the sauce, and serve.

Steps:
- Using a cleaver or a sharp, heavy knife, cut off and discard the tips of the drumsticks. Grasp hold of the chicken skin and remove from the legs. Remove any fat also. Combine thyme, marjoram, and 1/4 teaspoon each of salt and black pepper. Bring a large skillet to temperature over medium heat, then add the olive oil. Add the chicken legs and sprinkle the seasoning mix over the legs. Cover and cook for 12 minutes. Turn the legs over and cook for another 12 minutes on the other side. The chicken should be well browned on all sides. Using tongs, remove the legs and set aside on a serving platter and put in a warm place or warming oven. Add the shallots and garlic to the pan with a small amount of olive oil and saute until translucent. Add the balsamic and white balsamic vinegars and the wine to pan and deglaze. Bring to a boil, add water and remaining salt and black pepper. Boil until sauce is thickened and reduced to about 2/3 cup. The sauce should be just a bit sweet. If it's not sweet enough, you can add a small amount of sugar to taste. Return chicken to pan with juices on platter to coat. Serve with a generous portion of sauce.

SAUTEED PEARS

Steps:
- Cut each pear into 8 wedges. Toss the pears and the lemon juice in a non-reactive medium bowl, and set aside.
- Melt the unsalted butter in a large skillet over medium heat. Add the pears and about 1/2 cup water. Sprinkle with the sugar. Simmer until the water has evaporated and the pears turn golden brown, stirring occasionally, about 8 minutes. Serve warm with hot cereal.
Tips:
- Choose the right cut of chicken: Boneless, skinless chicken breasts or thighs are best for this recipe, as they cook quickly and evenly. If you're using bone-in chicken, be sure to remove the skin and bones before cooking.
- Brown the chicken well: This will help to develop flavor and prevent the chicken from sticking to the pan. Be sure to use a well-seasoned pan and cook the chicken over medium-high heat.
- Don't overcrowd the pan: If you're cooking a lot of chicken, cook it in batches so that the pieces don't overlap. Overcrowding the pan will prevent the chicken from browning properly.
- Use a good quality cider: The cider you use will make a big difference in the flavor of the dish. Look for a cider that is dry or semi-dry, and has a good balance of sweetness and acidity.
- Don't boil the cider: Bring the cider to a simmer, but don't let it boil. Boiling the cider will evaporate the alcohol and ruin the flavor of the dish.
- Add the pears at the end: Pears cook quickly, so add them to the pan towards the end of the cooking time. This will prevent them from becoming mushy.
- Serve immediately: This dish is best served immediately after it is cooked. The chicken will be tender and juicy, and the pears will be perfectly tender-crisp.
Conclusion:
This sautéed chicken with pears, cider, and sage is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The chicken is tender and juicy, the pears are tender-crisp, and the cider adds a lovely sweetness and acidity to the dish. The sage adds a touch of earthiness and depth of flavor. This dish is sure to please everyone at your table.
