Yield Makes 8 servings

Number Of Ingredients 3

6 pounds chayotes (mirlitons)
3 tablespoons olive oil
1/2 cup thinly sliced garlic (10 to 12 cloves)

Steps:

  • Preheat oven to 450°F with racks in upper and lower thirds.
  • Wearing protective gloves, halve chayotes lengthwise and discard seeds. Peel, then cut lengthwise into 1-inch wedges. Toss with oil and 1 1/2 teaspoons salt. Divide between 2 large 4-sided sheet pans.
  • Roast 30 minutes. Divide garlic between pans, then continue to roast, turning occasionally, until chayotes are golden brown on edges, about 30 minutes more. Season with salt.

Tips:

  • Choose the right chayote. Look for chayotes that are firm and have a smooth, unblemished skin. Avoid chayotes that are soft or have bruises or cuts.
  • Prepare the chayote properly. Peel the chayote and cut it into thin slices or cubes. If you are using a whole chayote, remove the seed from the center before slicing or cubing.
  • Use a hot skillet. When you are ready to cook the chayote, make sure the skillet is hot over medium-high heat. This will help to sear the chayote and prevent it from becoming mushy.
  • Don't overcrowd the skillet. When you add the chayote to the skillet, make sure to spread it out in a single layer. This will help to ensure that it cooks evenly.
  • Cook the chayote until it is tender. The chayote should be cooked until it is tender but still slightly firm. This will usually take about 5-7 minutes.
  • Season the chayote to taste. Once the chayote is cooked, season it to taste with salt, pepper, and any other desired seasonings.

Conclusion:

Sautéed chayote is a healthy and delicious side dish that can be enjoyed as part of a variety of meals. It is a good source of vitamins, minerals, and antioxidants, and it can help to boost your immune system and improve your overall health. So next time you are looking for a healthy and tasty side dish, give sautéed chayote a try!
