Number Of Ingredients 7

5 tablespoons extra-virgin olive oil, divided
3 garlic cloves, thinly sliced
1/4 teaspoon dried crushed red pepper
1 large bunch greens (such as spinach, mustard greens, kale, or broccoli rabe; about 1 pound), thick stems removed, spinach left whole, other greens cut into 1-inch strips (about 10 cups packed)
1 cup (or more) vegetable broth or low-salt chicken broth
1 15-ounce can cannellini (white kidney beans), rinsed, drained
1 teaspoon (or more) Sherry wine vinegar

Steps:

  • Heat 4 tablespoons oil in large nonstick skillet over medium heat. Add garlic and dried crushed pepper; stir until garlic is pale golden, about 1 minute. Add greens by large handfuls; stir just until beginning to wilt before adding more, tossing with tongs to coat with oil.
  • Add 1 cup broth, cover, and simmer until greens are just tender, adding more broth by tablespoonfuls if dry, 1 to 10 minutes, depending on type of greens. Add beans; simmer uncovered until beans are heated through and liquid is almost absorbed, about 2 minutes. Stir in 1 teaspoon vinegar. Season with salt and pepper, and more vinegar if desired; drizzle with remaining 1 tablespoon oil and serve.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

4 tablespoons olive oil
5 garlic cloves, minced
1/2 teaspoon dried red chili
8 cups kale, cut into bite sized pieces
1 cup vegetable broth
1 (15 ounce) can cannellini beans

Steps:

  • In a large skillet or wok heat the oil. Add the garlic and chili and sauté for about a minute.
  • Add the kale in large handfuls - add a handful, stir it until it begins to wilt and then add the next handful, and so on.
  • Pour the vegetable broth over all. Stir and simmer until the broth is almost completely boiled away - approximately 10 minutes.
  • Add the beans and gently stir through until heated.
  • Serve immediately.

Tips:

  • Be sure to rinse and drain the beans thoroughly before cooking. This will help to remove any impurities and excess starch.
  • Use a large skillet to ensure that the beans have enough room to cook evenly.
  • Add a flavorful liquid to the skillet, such as olive oil, chicken broth, or vegetable broth. This will help to prevent the beans from sticking and will add flavor to the dish.
  • Season the beans with salt, pepper, and other herbs and spices to taste. You can also add chopped vegetables, such as onions, garlic, or bell peppers, to the skillet.
  • Cook the beans over medium heat until they are heated through and tender, about 10-15 minutes. Stir the beans occasionally to prevent them from sticking.
  • Serve the sautéed cannellini beans as a side dish, main course, or salad. They can also be used as a topping for tacos, burritos, or nachos.

Conclusion:

Sautéed cannellini beans are a delicious and versatile dish that can be enjoyed in many different ways. They are a good source of protein, fiber, and other nutrients, and they can be easily customized to suit your own taste. So next time you're looking for a quick and easy meal, give sautéed cannellini beans a try!
