SMOKED SAUSAGE, APPLES AND SAUERKRAUT
This dish has German roots, but is widely prepared in Switzerland. I'm not sure exactly where I found this recipe, but it's been DH and grandson's favorite deer hunting camp meal for many years. It cooks in one skillet so clean up is minimal.

Tips:
- Use good quality sausage: A good quality sausage will make all the difference in this dish. Look for a sausage that is made with fresh, flavorful meat and has a nice, smoky flavor.
- Don't overcrowd the pan: When browning the sausage, make sure not to overcrowd the pan. This will prevent the sausage from cooking evenly and will result in a greasy mess.
- Use a variety of apples: This recipe calls for a combination of sweet and tart apples. This creates a nice balance of flavors in the dish. Granny Smith apples are a good choice for the tart apples, while Honeycrisp or Pink Lady apples are good choices for the sweet apples.
- Don't overcook the bok choy: Bok choy is a tender green that cooks quickly. Be careful not to overcook it, or it will become mushy.
- Serve with a side of mashed potatoes: This dish is hearty and flavorful, and it goes well with a side of mashed potatoes.
Conclusion:
This sausage with sauerkraut, apples, and bok choy is a delicious and easy-to-make dish. It's perfect for a weeknight meal or a casual weekend lunch. The combination of flavors and textures in this dish is sure to please everyone at the table. So next time you're looking for a new and exciting way to cook sausage, give this recipe a try.
