JALAPENO POTATOES

Jalapeno Potatoes image

Wonderful cheesy flavor with a slight kick from the jalapenos. The pimiento and jalapenos add a nice color contrast to the pale orange sauce. Use your discretion with the amount of jalapenos. You can also sub 1/8 to 1/4 cup chopped hot mixed peppers. It's best to use a waxy-type potato so they will keep their shape.

Tips:

  • Choose the right potatoes: For this recipe, it's best to use a firm potato variety that holds its shape well during cooking, such as Yukon Gold or Russet potatoes.
  • Cut the potatoes evenly: Cutting the potatoes into uniform pieces will help them cook evenly. Aim for 1-inch cubes or wedges.
  • Don't overcrowd the pan: When cooking the potatoes, make sure not to overcrowd the pan. This will prevent them from cooking evenly and becoming soggy.
  • Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet will help to evenly cook the potatoes and give them a nice crispy exterior.
  • Don't overcook the sausage: When cooking the sausage, be careful not to overcook it. Overcooked sausage will become tough and dry.
  • Add the jalapenos at the end: Adding the jalapenos at the end of the cooking process will help to preserve their flavor and prevent them from becoming too spicy.
